Ingredients
  • 1/2 baguette thick) thinly sliced, approx. 1/2-inch (2 cm
  • 2 tbsp olive oil
  • 1 cup soft goat cheese log
  • 1 tbsp fresh rosemary minced
  • 1 tbsp fresh thyme leaves minced
  • 1 tbsp italian parsley minced
  • 1/3 cup roasted red pepper diced
  • olive oil optional - for drizzling
  • Windsor® Black Peppercorns Grinder
Instructions
  1. Heat broiler in oven.
  2. Brush both sides of each baguette slice lightly with olive oil and place on baking sheet.
  3. Place under broiler, about 1 minute on each side, or until lightly golden. Remove from oven; set aside.
  4. Combine goat cheese with herbs in a medium bowl.
  5. Spread each baguette slice with 1 Tbsp (15 mL) cheese mixture.
  6. Top with 1 tsp (5 mL) roasted red pepper. If desired, drizzle with additional olive oil.
  7. Finish with ground Black Peppercorns, to taste.
  8. Finish with ground Windsor® Extra Coarse Sea Salt or Kosher Salt.
Recipe Notes

TIP: To make ahead, prepare baguette slices and store in air-tight container. Prepare goat cheese mixture and keep in refrigerator. Just before serving, assemble crostinis and arrange on a platter or tray.
