A delicious recipe for Mashed Potato Stuffing Cakes with mashed potatoes, stuffing and even turkey. Perfect for Thanksgiving leftovers.

  • 2 cups mashed potatoes, with milk and butter
  • 2 cups stuffing, cooked from scratch or prepared from box
  • 2 eggs, lightly beaten
  • 1/4 cup green onion, chopped
  • 1/4 tsp pepper
  • 4 tbsp oil
  1. In a bowl, combine the first 5 ingredients

  2. Add the oil into a pan on medium heat

  3. using an ice cream spoon, spoon or just your hands - make mixture balls to desired size and place 3-4 into the pan

  4. Using a spatula, flatten the balls in the pan so they form patties. Fry each side for 1-2 minutes, just to crisp the outsides.

  5. Remove from pan and place on a paper towel on a plate.

  6. When all are cooked, enjoy with sour cream or ketchup!

Recipe Notes

Add in turkey leftovers and make these loaded patties!

You can also add in bacon or other vegetables as you wish. Be creative, this is a great recipe to customize to your own tastes.
