On the heels of my much-loved Slow Cooker Cabbage Roll Soup recipe comes this healthier version. Packed with vegetables, and meatless – this recipe has fewer ingredients and is made on the stovetop in less than an hours time.

While I will always adore my slow cooker version that includes ground beef, this Healthy Vegetarian Cabbage Roll Soup recipe is more stock and vegetables based.

Made without the ground beef, this recipe takes less time to make. It’s good in a pinch when the craving hits, and NOW.

It wasn’t long ago that my daughter chose a Vegetarian lifestyle for almost a year. Dinner options were sometimes difficult, and this is how this recipe came to be. I wanted that taste, while also respecting her choices in going meatless.

The best part is, you can control how thick or thin this soup is by adjusting the stock to your preference.
