Confession: I’d take holiday flavours over pumpkin spice any day. Call me a bonafide chocoholic, yet this is my time of year to shine. It truly is the time of year for the most decadent of treats and desserts. Then, colour me excited, because it’s almost December!

What better combination for Christmas baking than chocolate and peppermint. I mean, a lot of great holiday recipes start with this fine duo. Plus, every coffee shop has switched to these flavours for their seasonal drinks.

It’s just as beloved as white chocolate and berries. You called it, tempting you with our White Chocolate Raspberry Cheesecake Bars. They are delicious!

The mocha donut includes a few ingredients that you may need to shop for, like Greek Yogurt (though you can use sour cream instead) and Instant Espresso.

Yet you’ll probably have the rest of the ingredients you’ll need to make these baked donuts on hand.

Once you have the cake-like donut that tastes like chocolate and coffee (mocha, silly), you glaze it with more chocolate that has a hint of peppermint.

Then, top with crushed candy canes of your choosing.

How to Make Peppermint Mocha Donuts

This recipe is pretty simple to make, even if you’ve never made donuts before. You’ll need to combine the dry and wet ingredients separately, then mix together to form the batter.

Once baked, you make the glaze and crush the candy topping. Assemble and voila! Easy right?

Donut Making Tips

With a donut baking pan, making baked donuts is relatively simple, yet I do have some tips for you, to ensure success:

  • If your batter seems thick, that is right. A thicker batter is better for making baked donuts.
  • Spooning thick batter in the mold might be frustrating. I like to use a piping bag with a big tip, so much easier!
  • If your donuts stick, it’s harder to get out compared to regular pans, so make sure to use a good non-stick spray and even spray and flour the pan prior to filling with batter
  • Do not over-mix the batter, or it’ll get tough.
  • Same token, do not overcook donuts, or they will be dry and crumbly. Aim for a minute or two before you’d typically think they’d be done.

Peppermint Mocha Donuts

These Peppermint Mocha Donuts are holiday perfection! With a rich chocolate cake donut infused with coffee, with a chocolate peppermint glaze and sprinkled with crushed candy canes.

Ingredients

  • 3/4 cup All-purpose flour
  • 1/3 cup cocoa powder
  • 4 tsp instant espresso powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup granulated sugar
  • 1 tbsp brown sugar
  • ¼ cup Greek yogurt or sour cream
  • ¼ cup plus 2 tbsp. milk 
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter (melted and slightly cooled)

FOR THE GLAZE

  • ¾ cup chocolate chips
  • ¼ tsp. peppermint extract
  • 2 tbsp. crushed peppermint candies

Instructions

    Preheat oven to 350 degrees and spray a donut pan with nonstick cooking spray. You can also dust with flour as well, to further prevent sticking, though your donuts might have a white residue if you use too much.

    In a large bowl - whisk together flour, espresso powder, cocoa powder, baking powder, baking soda, both sugars and salt. 

    In a small bowl - whisk together yogurt, egg, milk and vanilla until smooth. Add in the melted butter once slightly cooled.

    Combine the wet ingredients into the dry and fold until fully combined. Do not over-mix the batter.

    Scoop the batter a piping bag or a decorating tool. Pipe the batter into the wells of the prepared donut pan.

    Bake for 9-10 minutes, until they are set and bounce back when gently pressed.

    Allow it to cool in the pan for 5 minutes, then cool for another 5 minutes on a cooling rack.

    Prepare the Glaze:

    Add the chocolate chips into a small bowl and microwave for 45 seconds, stirring mid-way.  Cover the bowl and allow the chocolate to sit for 3 minutes. Uncover and stir. If not fully melted, warm in increments of 10 seconds until done.

    Dip each donut in the glaze and place on the baking sheet.

    Top with peppermint candies before moving on to the next one.

  1. Those look really good, I have never made donuts, I own 2 donut pans but they are just sitting in the cupboard collecting dust, might have to pull them out!

  2. Can you make the donuts the day before and then frost them the next day? I have a busy schedule but want to bring them to a potluck.
