CHOCOLATE RASPBERRY CREAM PIE

After enjoying holiday pies such as Marshmallow Pumpkin Pie and S’mores Brownie Pie, I have been craving a more summery fruit pie.

Yet not your typical apple pie, because I’m already craving and looking forward to all the berries!

I don’t think there’s a better way to entice spring and summer than with this Chocolate Raspberry Cream Pie. Also known as: the best thing I’ve ate this year. Let’s just forget that it’s only February.

While a dessert like Key Lime Margarita Pie Is full-on summer, this cream pie combines the richness comfort of chocolate with dreamy raspberry.

I tell you, it’s the perfect combination. I just love chocolate raspberry recipes. When it’s raspberry season, I tend to stock up and dive right into all the great raspberry desserts I can.

This perfect pie recipe has a lot of cream cheese in it, as you’ll see. So the taste very much resembles a cheesecake. Yet it’s not quite as dense and heavy.

Usually cream pies aren’t layered, and I think that’s what I love most. Taking a bite with all three layers is like heaven.

This recipe is really simple to make, and actually requires few simple ingredients.

It would be a wonderful dessert for a special occasion, so for those that think this would make the ideal Valentine’s Day dessert, you are right!

Yet this is a cream pie that could be made on any ordinary day. Because sometimes you just want/need an incredible treat to satisfy that sweet tooth.

Ingredients to Make Chocolate Raspberry Pie

You’ll need the following ingredients to make this wonderful cream pie recipe. the full detailed instructions are below in the printable recipe card.

  • cooked pie crust
  • semi-sweet chocolate chips
  • room temperature cream cheese
  • heavy whipping cream
  • Jell-O Raspberry Powder Gelatin Mix
  • whipped cream topping

How to Make Chocolate Raspberry Cream Pie

Bake a store bought pie crust as per package directions. Remove from heat and allow to cool. Once cooled, insert into a pie plate or use the one that it came in.

Follow the recipes to make the beautiful and easy three layers:

CHOCOLATE LAYER:

In a medium saucepan over medium heat, melt the chocolate chips.

Using the large bowl and a stand mixer on medium speed (or hand mixer, electric mixer), beat 4 oz of the cream cheese. Use a wooden spoon to scrape sides, to ensure all is properly mixed.

Then add in the melted chocolate to the cream cheese mixture, and mix on low to combine. Pour the chocolate layer onto the prepared pie crust and set aside.

This layer tastes just like heavenly chocolate mousse with the most decadent chocolate taste.

RASPBERRY LAYER:

Wash the bowl of a stand mixer and the attachment. Add in the remaining 4oz of cream cheese and beat until smooth.

Slowly add in the heavy whipping cream and again beat until the lumps are gone. If really thick, add in 1/4 cup more heavy whipping cream.

Add in the raspberry jello powder and whip until peaks form, then spoon this raspberry mixture over the chocolate layer.

Refrigerate for at least 1 hour before serving

WHIPPED TOPPING LAYER

Add whipped topping layer, which is the final layer.

Top with fresh raspberries for garnish, and enjoy every bite!

Variations on Recipe: I love semi-sweet chocolate chips, yet feel free to use dark chocolate chips for this recipe, to make dark chocolate raspberry pie. Alternatively, you can also use white chocolate chips as well.

You can absolutely use your own homemade pie crust too. In fact, you can replace the crust altogether and use your favourite graham cracker crust, cookie crust, or chocolate crust even.

To Store: Cover the pie with plastic wrap or aluminum foil, and refrigerate for up to 5 days.

  • 1.5 cups semi-sweet chocolate chips
  • 8 oz cream cheese, divided
  • 1 cup heavy whipping cream
  • 1 Jell-O Raspberry Powder Gelatin Mix, I used 85g package
  • whipped cream topping
  • fresh raspberries, for garnish

Instructions

1. If you haven't done so already, cook a pie crust as per package directions, remove from heat and allow to cool

CHOCOLATE LAYER:

2. In a saucepan over medium heat, melt the chocolate chips.

3. Using a stand mixer {or hand mixer}, beat 4 oz of the cream cheese, then add in the melted chocolate and mix on low to combine. This is your chocolate layer.

4. Pour the chocolate layer into the cooked pie crust and set aside.

RASPBERRY LAYER

5. Wash stand mixer bowl and attachment, then add in the remaining 4oz of cream cheese and beat until smooth.

7. Slowly add in the heavy whipping cream and again beat until the lumps are gone. If really thick, add in 1/4 cup more heavy whipping cream.

8. Add in the raspberry JELL-O powder and whip until peaks form, then spoon this layer over the chocolate layer.

9. Refrigerate for at least 1 hour before serving

WHIPPED TOPPING LAYER

10. Add whipped topping layer, or in a pattern of your choosing. I suggest both actually.

11. Top with fresh raspberries for garnish, and enjoy!

Notes

- You can use a homemade pie crust for this recipe, or a store bought crust. Just make sure to cook it!

- You can decrease the calories by using low-fat or light cream cheese and/or whipped topping. YET, this will result in runnier layers and the light whipped topping melts fast and doesn't hold it's shape well.
