We all know cucumbers are good for you in many ways. High in Nutrients and low in calories, they contain many important vitamins and minerals. Loaded with antioxidants, cucumbers can lower blood sugar, and promote hydration.

Now onto pomegranates, it’s a fruit I literally crave. Pomegranates are known as one of the best super foods. Also with antioxidants, they have countless health benefits.

Just do a simple search if you aren’t yet aware, and you should see why this fruit should be a regular in the meal rotation.

Now, pair the two together with some fresh dill and you have one powerful healthy salad right there. This Cucumber Pomegranate Salad is a great healthy choice and so an ideal side to any summer meal.

Cucumbers and dill have been combined for ages, and for great reason. The sweet and tart pomegranate seeds with salty and creamy feta cheese make a refreshing combination.

This is a Persian or Mediterranean salad because of the ingredients, but I just call it delicious. Not only does it taste so good, but look at the presentation! It’s a great salad to wow the guests indeed.

Cucumber Pomegranate Salad

Cucumbers and dill = healthy + delicious! Add in some pomegranates and you have a beautiful fresh Cucumber Pomegranate Salad. This side recipe is bound to be a hit in your house!

Ingredients

  • 1 cucumber, diced
  • 3 tbsp fresh dill, chopped
  • 3 tbsp olive oil
  • 1/4 cup feta, crumbled
  • 1/4 cup pomegranate seeds
  • pepper, to taste

Instructions

  1. Wash and chop cucumber and place in a medium-sized bowl.
  2. Sprinkle in the dill and toss to disperse.
  3. Pour in olive oil and toss to coat.
  4. Sprinkle in feta and pomegranate seeds. Add pepper, to taste, if desired.
  5. Give a final toss before serving.

  1. Made it and ate it. The pomegranate gives the tang usually given by vinegar. I didn’t have any fresh dill so I used fresh basil and fresh mint. Pretty darn good.
