Growing up, we were a meat and potatoes family. Actually, it was a rare and rather special occasion when we deviated from the norm. Always simple mashed or baked, variety wasn’t the spice of life back then.

It only goes without saying, during my early adult years, I rarely cooked potatoes. Truly, I had had enough. Yet thinking back now, I could have enjoyed them more if I hadn’t just relied on the plain and boring recipes I grew up on.

Thanks to baby red potatoes and this Oven Roasted Red Potatoes recipe, I have found my love for spuds again. There’s just so many ways to cook them, and each one I’ve found are tastier than the previous. Unlike the bland of the past, red potatoes are never boring in this home.
