Easy Raspberry Hand Pies

 

While I make a mean pie crust recipe, more often than not I lean towards the simpler recipes that use store-bought doughs and pasties. They taste so great and shave so much time off making them. Also, usually my baking sprees are last minute and wanted now.

These Pumpkin Pie Turnovers prove those steps saved produce great results. Simply amazing!

So when making pie desserts, I switch form classic homemade pies to many variations such as my Brownie S’mores Pie. I do like a good shortcut in the kitchen, as proven by these No-Bake Apple Pie Parfaits.

My point? Similar taste, less effort! We all like to save time without sacrificing taste.

For a simple Valentine’s Day dessert to summer treats and even a comforting fall and winter sweet – you can’t beat a good ‘ol hand pie. The perfect size to satisfy those cravings, they make the best companion to a cup of coffee, to a dinner finale.

While we are in the depths of January, I’m already dreaming about the upcoming affordable and plenty berry season. Luckily for us, we have canned berry pie filling to fill the void until the season finally arrives.

I tend to have many kinds of canned pie filling on hand at all times. It’s something I buy in multiples when on sale, they come in handy for so many recipes. For this recipe, I chose raspberry.

How to Make Hand Pies

 

This Raspberry Hand Pies recipe is simple, and includes shortcut ingredients that count. The stars are definitely the raspberry pie filling and refrigerated pie crusts.

I cannot stress this enough – you are allowed to shortcut!

In just a few steps you’ll have the dough cut, filled, folded and pinched. After oven baking, glaze and serve! I could reiterate the recipe below, but it’s not that complicated.

A warm treat for a cool winter day to a sweet summertime dessert, this is one recipe that can be used for Valentine’s Day to everyday. No fuss, just delicious!

 

Hand Pie Flavour Options

 

While I love me some raspberry, chocolate raspberry tarts anyone? Truth be told, this recipe can be made with many flavour options.

Have pie filling? Use it! Mixed berry? Yes! Blueberry? Absolutely. You decide your flavour with an easy swap, no second recipe required.

How can you go wrong with a pie in your hand? An old time favourite, hand pies are a sweet treat for breakfast, a snack or dessert. Enjoy!

Ingredients
  • 1 can raspberry pie filling
  • 2 refrigerated pie crusts, room temperature
  • 1 egg, lightly beaten
  • 3 tbsp milk
  • 1 cup icing sugar
Instructions
  1. Preheat oven to 425. Line a baking sheet with parchment paper, set aside.

  2. Using a 4" cookie cutter, cut five to six dough circles from each pie crust.

  3. Place the dough circles on the prepared baking sheet. Drop a tablespoon of pie filling into the center of each dough circle (no more). Fold the circle in half, and use a fork to seal the edges.

  4. Brush the top of each hand pie with the beaten egg. Bake for 10 minutes.

  5. Transfer the pies to a cooling rack with a sheet of parchment paper underneath it. In a bow, combine the milk and confectioners sugar adding more milk for a thinner glaze or more confectioners sugar for a thicker one. Drizzle the icing liberally over each pie. Cool for 15-20 minutes before eating.

  6. Enjoy!
