Best of all, they are so easy to pull together. You simply mix all the cooked ingredients, and fry each side in oil. Use a spatula to flatten each ball, yet as a warning, if you flatten too much they might crumble.

  1. These look really good, and a great way to use up the leftovers in a different way, but I always have a problem when making potato cakes, think I will have to give this one a try!!

  2. I can never think of a way to use up leftover mashed potatoes so I will definitely be trying this recipe.

  3. I made your recipe yesterday from left over mashed potatoes I had from dinner the night before. I used boxed stuffing and they came out great. My family loved them with sour cream as you suggested. I did put just a pinch of hot pepper flakes in them but that’s because I love a bit of spice. Thanks Tammi for sharing this recipe.

  4. These look incredible. What a great way to re-purpose leftovers, I pinned this gem.

  5. I would like to try these but the recipe itself doesn’t seem to be here.

  6. I made these exactly how you posted but instead of throwing them in a frying pan with oil I cooked them in the waffle maker!!! So good ? nice and crispy brown on the outside and soft and gooey on the inside plus they look like waffles and who doesn’t like waffles!?!?
