Mashed Potato Stuffing Cakes
I have a love/hate relationship with leftovers, depending on what it is. These Mashed Potato Stuffing Cakes is one that I love, since it uses up all those holiday leftovers such as potatoes, stuffing – and even turkey if you wish.
You can make this with your own homemade stuffing, or boxed stuffing for ease. I find this ingredient to be the shining star in my Best Meatloaf Recipe Ever.
It’s nice to have another Stovetop Stuffing recipe in my repertoire, proving that they can be purchased for meals aside from using just for stuffing alone.
Mashed Potato and Stuffing Patties are perfect for lunch, a potato side dish, or as a snack. Crispy on the outside and soft in the middle, the texture sure does compete with the amazing flavour.
Best of all, they are so easy to pull together. You simply mix all the cooked ingredients, and fry each side in oil. Use a spatula to flatten each ball, yet as a warning, if you flatten too much they might crumble.
This recipe does have a lot of wiggle room to make it as you wish as well. Add in turkey from a holiday dinner, and you have use for all key holiday dinner leftovers. Then, top with sour cream and green onion, and you have Loaded Mashed Potato Stuffing Patties!
If you’d like, also add in crumbled bacon or some veggies – you can even top with ketchup! We made these as per the recipe as a snack and side to meat, yet you can stuff them with more ingredients for a stand-alone lunch or dinner on their own.

- 2 cups mashed potatoes, with milk and butter
- 2 cups stuffing, cooked from scratch or prepared from box
- 2 eggs, lightly beaten
- 1/4 cup green onion, chopped
- 1/4 tsp pepper
- 4 tbsp oil
- In a bowl, combine the first 5 ingredients
- Add the oil into a pan on medium heat
- using an ice cream spoon, spoon or just your hands - make mixture balls to desired size and place 3-4 into the pan
- Using a spatula, flatten the balls in the pan so they form patties. Fry each side for 1-2 minutes, just to crisp the outsides.
- Remove from pan and place on a paper towel on a plate.
- When all are cooked, enjoy with sour cream or ketchup!
Add in turkey leftovers and make these loaded patties! You can also add in bacon or other vegetables as you wish. Be creative, this is a great recipe to customize to your own tastes.
