One Pan Cheesy Sausage & Tortellini Skillet

One day, while on that chaotic time crunch between end of school and activities – I stood in the kitchen twirling between pantry and fridge asking that age old question.

What do I make for dinner that is quick and easy? It would be an early dinner, yet we were all hangry.

I noticed the leftover sausage in the fridge and immediately thought of my go-to’s, blah. We could all use a fresh idea and to escape the rut.

Earlier that week I made made Instant Pot Tomato Tortellini Soup, so in addition to the sausage, I also had leftover tortellini to use up.

One Pan Cheesy Sausage & Tortellini Skillet is super simple to make and uses just a few ingredients. Plus, I was craving some comforting Italian food!

So I took the must-include ingredients and know it had to include a tomato based sauce and plenty of cheese. Sausage Tortellini Skillet is a quick meal to get onto the table, and also has the beauty of being a one-dish meal.

It’s busy evenings like these that make you appreciate having few dishes to do as well, because sometimes we literally don’t have time for that.

As the season turns to fall, this recipe pulls together the best of this time of year. It’s a hearty, filling meal that warms the belly with tortellini, sausage, gooey cheese and rich tomato sauce.

I’d say this tortellini recipe will be on our regular rotation, just like this Tortellini Alfredo recipe.

You can choose whichever kind of sausage you wish, and certainly add more seasonings as desired if you see fit. As you can see by the recipe, it leaves room for variations right down to kind of tomato sauce – so get personal with this recipe if you want.

You’ll also notice in the recipe that some water is called for. This is because cooking the sauce {spaghetti is a bigger offender than tomato}, makes it paste-like. Adding water ensures it doesn’t bulk up too much.

One Pan Cheesy Sausage and Tortellini Skillet

This One Pan Cheesy Sausage & Tortellini Skillet is a quick and delicious meal that uses just six ingredients. The whole family will love this easy Italian dish, which is so perfect for those busy weeknights. 

Ingredients

  • 1 ring Sausage, I used Ukrainian sausage
  • 2 cloves garlic, crushed
  • 1 pkg fresh cheese tortellini
  • 1 large can spaghetti or tomato sauce
  • 1/2 cup water
  • 1 tsp italian seasoning
  • 3 tbsp olive oil
  • 1.5 cups mozza cheese
  • basil or garnish, if desired
  • salt and pepper, as desired

Instructions

  1. Add olive oil to a large stovetop skillet, on medium high heat. Add in sliced sausage and garlic and cook until done.
  2. Stir in the sauce, water, seasoning and tortellini. Bring mixture to a boil, then turn heat to low, cover the skillet and simmer for 8  minutes or until tortellini is cooked. If you don't have a lid, do so without but you'll have to stir more often and increase the simmer time 1-2 minutes. 
  3. Remove from heat and stir in the mozza cheese until melted. If you want to crisp the top, broil the skillet in the over for an additional 2-3 minutes
  4. Garnish with basil if preferred and serve warm. Enjoy!
