Instant Pot Beef and Broccoli

Are you looking for a delicious dinner that takes 15 minutes to cook in your pressure cooker? This delicious stir-fry recipe results in a tender, tasty, and no-fuss dinner.

One of my favourite items to order at a Chinese restaurant is beef and broccoli. The salty sweet sauce, and blend of meat and bright green broccoli makes my mouth water just thinking of these asian flavors.

Thing is, you can make an EASY version of this classic from home, making it easier and more affordable.

This Instant Pot Beef and Broccoli recipe is especially great for those busy weeknights, from start to finish {including chopping etc}, I made this in a cook time of 40 minutes flat.

The result is a flavorful tender beef in a savory sauce that the whole family will love.

How to Make Instant Pot Beef and Broccoli

You will need the following ingredients to make Beef and Broccoli in an Instant Pot:

  • boneless chuck roast or flank steak, cut into thin slices
  • fresh broccoli florets
  • garlic
  • canola oil (or olive oil, sesame oil)
  • small onion
  • low sodium beef broth
  • low sodium soy sauce
  • brown sugar
  • corn starch
  • sesame seeds, for garnish

To Make: Choose the saute mode on the Instant Pot and add canola oil. When the pot is hot, add the garlic, onion, and thin strips of beef. Cook for a few minutes until the meat is brown, stirring frequently.

Next add in the broth, soy sauce and brown sugar. Stir to dissolve the sugar, then turn off the saute mode. While the beef cooks for 15 minutes at high pressure, cook the broccoli using the microwave and water.

This is also the time to start cooking the rice. I do this on the stove, yet feel free to use your rice cooker if you prefer.

After the 15 minute cooking time, remove about 1/2 of the liquid from the Instant Pot via quick release, and place into a small bowl. Mix the cornstarch into the reserved liquid until it is smooth.

Then return the cornstarch slurry to the pot and saute again for about 5 minutes cooking time, so the sauce thickens. Turn off the saute mode, and toss broccoli into the pot and stir until coated.

What Kind of Meat to use:

When choosing cuts of meat for this recipe, I suggest a boneless chunk roast cut into strips. They willl become so tender when pressure cooked. As a warning, other stir-fry cuts intended for quick searing might become tough when pressure cooked.

You can also use sirloin steak or your preferred lean cut of beef.

** One thing that is crucial to remember, is to use Low-Sodium Soy Sauce over regular soy sauce. Any others and your dish will be too salty, so choose your soy sauce with less sodium.
 


What to serve with Beef and Broccoli?

 
We served your broccoli beef over cooked rice, basmati rice to be exact. Yet, you could switch things up based on preference or diet and go with a ramen noodle or Cauliflower Fried Rice.

Alternatively, you can also use cauliflower rice for a lob carb meal, jasmine rice, instant rice, or coconut rice. You also have the option to use white rice, or brown rice.

We had leftovers of this instant pot chinese recipes, and they tasted so good! Just store the leftovers in an airtight container and refrigerate for up to 5 days.

So feel free to double the recipe {not the pressure cooking time}, and make individual servings for work and school lunches.

Ingredients

  • 1 lb boneless chunk roast, cut into strips
  • 4 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 tbsp canola oil
  • 1/2 small onion, diced

FOR THE SAUCE

  • 3/4 cup low sodium beef broth
  • 1/2 cup low sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp corn starch

Instructions

  1. Choose the saute mode on the Instant Pot and add canola oil. When the pot is hot, add the garlic, onion, and beef slices. Cook for a few minutes until the meat is brown, stirring frequently. 
  2. Add in the broth, soy sauce and brown sugar. Stir to dissolve sugar then turn off the saute mode.
  3. Secure and seal the Instant Pot lid and cook for 15 minutes at high pressure
  4. While the Instant Pot cooks, cook the broccoli {adding in 1 cup of water with it} for 3-4 minutes in the microwave, or until tender
  5. This is also the time to start cooking your rice or other preferred side dish to your meal
  6. When the instant Pot is done, manually release the pressure by carefully turning the release knob and venting. 
  7. Take off the instant Pot lid and remove about 1/2 of the liquid, into a small bowl. Mix the cornstarch into it until smooth.
  8. Return reserve to post and saute again for about 5 minutes, so the sauce thickens up. Turn off saute mode, and toss broccoli into the pot and stir until coated. 
  9. Serve immediately and enjoy!
