Slow Cooker Mississippi Chicken and Potatoes

 

One of the most common roast recipes I make is Mississippi Roast, yet to change things up one day I just substituted the beef for the chicken. Start by having a read through my post entitled How to Cook Chicken in a Slow Cooker for some basic tips and precautions.

Also because my oldest has decided {for now?} not to eat red meat. Needless to say we’ve made plenty of Skillet Chicken Pot Pies!

So I’ve been trying to replace some of my favourite red meat recipes with chicken or turkey. Or, this Slow Cooker Brown Sugar Pineapple Ham – that’s another that is a hit with everyone in this house.

Try this recipe with a vegetable side dish of Roasted Parmesan Green Beans or Honey Glazed Carrots!

So what does it mean to ‘Mississippi’ a meat?

As you could have guessed, a Mississippi chicken recipe originates from {drumroll} Mississippi. The traditional way is using butter, pepperoncini peppers and ranch dressing mix to make a sassy flavour combination.

While it IS tasty beyond belief, my kids find it too spicy for their liking, so I have adapted my way to Mississippi-cook by leaving out the peppers and adding in some au jus instead.

This recipe for Mississippi chicken is actually a meal in one and cooked the easiest way possible, because, chaotic life and all. It’s an all-in-one meal – Slow Cooker Mississippi Chicken and Potatoes!

Aside from the shockingly beautiful taste of this recipe, I love it because it’s a TRUE slow cooker meal – You can toss everything in and forget about it until dinnertime. Serve with a side salad or a bun if you wish – and voila!

With only 6 ingredients to this southern chicken recipe {and I count the half-cup of water in this total}, this recipe makes one awesome dinner.

You also get leftover love with this recipe – it’s so good the next day. Usually we use the leftovers for lunch the next day, Mississippi chicken in a bun, served with pickles. YUM!

Slow Cooker Mississippi Chicken and Potatoes

Yield: 6 people
Prep Time: 10 minutes
Cook Time: 8 hours
Total Time: 8 hours 10 minutes

The star ingredients of this Slow Cooker Mississippi Chicken and Potatoes recipe is butter, ranch dressing mix and au jus - such a tasty flavour combination. I love it because it's a true delicious slow cooker meal.

Ingredients

  • 1 - 1.5 lbs skinless boneless chicken breasts
  • 4 potatoes - russets, cleaned & cubed
  • 1/2 cup butter
  • 1 pkg au jus
  • 1 pkg Hidden Valley Ranch seasoning
  • 1/2 cup water

Instructions

  1. Line the slow cooker bowl if you prefer. If not, simply grease the bowl.
  2. Place cubed potatoes on the bottom
  3. Pour in the water
  4. Place chicken breasts on top of the potatoes
  5. Sprinkle the ranch seasoning over the chicken, then the package of au jus
  6. Place the butter on the very top of everything. 
  7. Cover and let cook on low for 7 -8 hours or until the potatoes are soft and cooked through
  8. Remove the chicken breasts and shred them with two forks, and then return them to the slow cooker bowl.
  9. Mix everything well and serve. A nice bun or biscuit would be excellent served on the side if you wish. Enjoy!
