Thai Shrimp with Peanut Dipping Sauce

I love a good appetizer shrimp recipe, and my favourite is this easy Garlic Shrimp. Yet I’ve never passed up this Hot Shrimp Dip either, YUM!

Know what else is a classic? Peanut butter is a fan favourite, I’m reminded of this as my Peanut Butter Balls recipe is going viral these days! So many are already planning their holiday cooking and baking, and who can blame them – the comfort foods are needed this time of year!

I wanted to make another recipe using peanut butter and had the tendency to go with a sweet dessert. Yet I spotted the recipe for Thai Shrimp with Peanut Dipping Sauce and knew I just had to try it.

I have a mad-passion for Thai food these days, I truly cannot get enough. Yet also I wanted to break from the usual various ways I use peanut butter, and try something savoury.

This pantry staple ingredient was going to work outside of the box!

What truly surprised me with this recipe for Thai Shrimp with Peanut Dipping Sauce, is that it takes so few ingredients, and took no time to make at all.

Not only is the shrimp cooked in the flavourful sauce which includes peanut butter, you have the option of using the remaining as a dip for those who need more added.

I assumed this would be a recipe that adults would enjoy the most, yet my kids were drooling at the stove and rushed me through taking photos so they could dive in. I wasn’t certain whether they’d be fans, yet there was a request to make it again. Recipe score!

Thai Shrimp with Peanut Dipping Sauce

Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Thai Shrimp with Peanut Dipping Sauce recipe, a few simple ingredients makes this shrimp and dipping sauce enjoyed alone or in stir-fry

Ingredients

  • 1/2 cup Kraft Smooth Peanut Butter
  • 1/2 cup coconut milk
  • 1 tbsp reduced-sodium soy sauce
  • 1 tbsp Sriracha sauce
  • 1 clove garlic, minced
  • 42 frozen cooked cleaned (with tails left on) medium shrimp (3/4 lb./340 g), thawed, drained

Instructions

  1. Cook all ingredients except shrimp in saucepan on low heat 2 min. or until heated through, stirring frequently.
  2. Pour 1/4 cup peanut sauce into large skillet. Add shrimp; cook 3 to 4 min. or just until shrimp are heated through, stirring frequently.
  3. Serve with remaining sauce.

Notes

For a change of pace, use this easy-to-make peanut sauce to prepare your favourite stir-fry.

If you prefer a milder sauce, omit the Sriracha sauce.

Garnish with fresh parsley before serving.

  7. Both the peanut sauce and the shrimp look amazing here! I’ve only tried the peanut dipping sauce a few times and I love it (they go really well with Vietnamese summer rolls too)! But it sounds like the recipe is simple enough that I can make it myself, I’ll probably be eating a lot more of it!
