How to make Butterscotch Fudge
I love this easy fudge recipe for the ease in making it. You don’t even need a candy thermometer or the need to cook in a heavy saucepan, which has most other fudge recipes beat. Needing special equipment to make fudge was always the part the turned me off. Are you the same?
You simply add these ingredients to a microwave safe bowl:
- butterscotch chips
- sweetened condensed milk
- vanilla extract
- pinch of salt, optional
Place all together and melt in short intervals of medium heat using a microwave. I suggest to start high for about 40-50 seconds. Stir the mixture and and microwave again for 15 second intervals until done. Stir and it should be completely melted. Add vanilla and stir once more.
When the fudge mixture is combined, pour into a parchment paper lined and sprayed square pan, and refrigerate for a couple of hours or until firm.
When firm, remove from the square baking pan and cut into small pieces, then enjoy. Really, this could not be easier.
To store this easy butterscotch fudge, store in room temperature in an airtight container or cover with plastic wrap.
What kind of butterscotch chips do I use?
Here in Canada, our bags of butterscotch chips are sold in grocers along with the chocolate chips. Until I started getting questions from my US and UK readers questioning these bags, I didn’t feel the need to explain.
A package butterscotch chips are usually made by Hershey’s (or no-name) and come in 300g bags. This is about 2 cups butterscotch chips. I like to make at least 2 batches when I make homemade fudge, so buy in bulk to save some money if you can.
What is the secret to making creamy fudge?
The not-so-secret trick to delicious homemade fudge is to cook the ingredients to the right temperature to form a sugar syrup, and cool the mixture properly so the texture of the fudge turns out smooth and firm, but soft enough to cut.
Sometimes tricky when making on the stove, the evaporated milk and the sugar, cooked in short medium heat intervals, allows for that creamy consistency that we love fudge for. Overcook and it’ll be hard and dry. If this happens, add a little more evaporated milk and bringing it slowly back to a higher temperature.
This is a wonderful no-bake dessert fudge recipe, which is even better. This means you can have your fudge treat in such little time, really, the bulk of the ‘baking’ is cooling in the fridge!

- 2 bags butterscotch chips
- 1 can sweetened condensed milk
- 1 tsp vanilla extract
- pinch of salt, optional
- Line an 8" x 8" pan with parchment paper (or foil) and spray with cooking spray.
- In a medium sized mixing bowl, add the butterscotch chips, sweetened condensed milk, and pinch of salt. Give it a stir and microwave on high for about 50 seconds. Stir and microwave again for 15 seconds. Stir and it should be completely melted. Add vanilla and stir once more.
- Pour the mixture into the prepared pan. Refrigerate for 2 hours, or until firm.
- Once the fudge is firm, remove from the pan with the parchment and peel parchment from bottom of fudge.
- Cut into pieces and enjoy!
