Cheesecake doesn’t have to be ordinary, proof is in these Blueberry Cheesecake Popsicles! This recipe also takes this classic treat up a notch.

For myself, one of the most best flavours of the Winter season is MOCHA. Not just because I love coffee either, it’s a classic taste that I just can’t resist, it’s so comforting.

Mini Mocha Cheesecakes

These adorable Mini Mocha Cheesecakes are so simple to make, and very delicious. They actually have just a bit of instant coffee in the cheesecake batter, and some cocoa in the topping – so this recipe isn’t an intense mocha flavour – it’s just right.

There are many ways to make cheesecake, and this particular one is very easy,I’d consider it a no-fail cheesecake recipe.

Mini Mocha Cheesecakes

Mini Mocha Cheesecakes feature a cool whip frosting, my favourite! I’ve mentioned previously just how much I adore a cool whip topping, it’s light and not too sweet.

Simply pipe the frosting onto the top {I dipped my own coffee beans in melted chocolate instead of buying them}, and you have a beautiful dessert that impresses in looks as much as it does the taste. These also have a nice cookie crust on the bottom!

Mini Mocha Cheesecakes

Cook Time: 35 minutes
Total Time: 45 minutes

Easy to make and delicious Mini Mocha Cheesecakes recipe with chocolate coffee beans and a cool chip cocoa topping, the perfect mocha cupcake!

Ingredients

  • 10 vanilla creme-filled chocolate sandwich cookies, about 3/4 cup, finely crushed
  • 2 Tbsp butter, melted
  • 2 8 oz. pkg Cream Cheese, 250 g each, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp Instant Coffee Original Roast
  • 2 tsp water
  • 4 oz Baker's Premium 70% Cacao Dark Chocolate, melted, cooled
  • 3/4 cup Whipped Topping, thawed
  • 1 Tbsp unsweetened cocoa powder, sifted
  • 24 chocolate-covered coffee beans

Instructions

  1. Heat oven to 350ºF.
  2. Mix cookie crumbs and butter; press about 1 Tbsp. onto bottom of each of 12 foil-lined muffin cups. Bake 8 min.
  3. Beat cream cheese and sugar with mixer until blended. Add eggs; beat just until blended. Dissolve coffee in water. Add to batter with melted chocolate; beat until blended. Spoon about 1/4 cup batter into each cup. (Note: Cups will be full.)
  4. Bake 23 to 25 min. or until centres are almost set. Cool completely.
  5. Mix Cool Whip and cocoa powder until blended; pipe onto cheesecakes. Garnish with coffee beans.
