One of the first memories which I can recall as a child, is making jam in the kitchen with my Mom.

This Strawberry Chia Seed Jam recipe came about because I terribly miss her homemade jam, yet at the same time haven’t committed to making my Mother’s glorious recipe – which is so time consuming to say the least.

After all, I recall spending the entire day in the kitchen {if not the weekend}, cooking and grinding berries.

All that straining and checking temperatures – it really is an art that I haven’t worked up the courage to master.

Even getting all the pans and tools necessary makes me leery.

Strawberry Chia Seed Jam

Strawberry Chia Seed Jam is so incredibly easy and takes only 5 ingredients, and includes chia seeds which are so very good for you. Tasty jam in no time.

Ingredients

  • 2 C cups sliced Strawberries, fresh or frozen
  • 2 tbsp Honey
  • ½ cup Water
  • 1 tsp Lemon Juice
  • 2 tbsp Chia Seeds

Instructions

  1. In a pot, combine the strawberries, water, lemon juice and honey. Heat slowly over medium heat and mash the berries until they are broken down yet still chunky.
  2. Bring the mixture to a boil, and add the chia seeds.
  3. Stir well and let cool, stirring occasionally. The jam will thicken as it cools.
  4. Transfer to a clean, dry jam jar. It will stay good in the fridge for approximately 1 week.
