This Pecan Pumpkin Pie French Toast Casserole recipe is a make-ahead beauty one-dish meal. Really, you could not as for a better breakfast or brunch, as it tastes most like a pumpkin pie and like french toast, so the ingredients really do hit the mark with this one.

Fall flavours, don’t you just love them? There’s nothing more comforting in Autumn like Maple Pumpkin Pie or Pecan Pie Bars.

While I love to make Strawberry Stuffed French Toast in the summer, this is a fall version that suits the season.

The countdown to back to school marks another change as we transition from summer – pumpkin spice all the things! This Pecan Pumpkin Pie French Toast Casserole recipe celebrates that and more with it’s make-ahead beauty, and it’s feature for being a one-dish meal. OK that and french toast too.

Really, you could not as for a better breakfast or brunch recipe than this, that is other than my quick and easy camping breakfast recipe idea, which is made on the BBQ!.

Pecan Pumpkin Pie French Toast Casserole is a mouthful title, yet I wanted to place hommage on it’s delicious ingredients as well as the style of the dish itself. Since you allow it to sit once combined, for a minimum of 3 hours – it’s also an overnight recipe, which is so handy to have ready to pop in that oven.

Ask my kids and they’ll tell you it tastes most like a pumpkin pie and like french toast, so the ingredients really do hit the mark with this one.

Perfect for busy weekends, when company is over, and for those cool fall days which are coming up. Sad to speak of Autumn, yet great pumpkin spice recipes make it easier, along with oversized sweaters.

Pecan Pumpkin Pie French Toast Casserole

Prep Time: 10 minutes
Cook Time: 1 hour 5 minutes
Total Time: 1 hour 15 minutes

This Pecan Pumpkin Pie French Toast Casserole recipe is a make-ahead beauty one-dish meal. Really, you could not as for a better breakfast or brunch!

Ingredients

  • 1 loaf of day old french bread, diced
  • 1 3/4 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 cups Burnbrae Farms Egg Creations Whole Eggs
  • 1 cup pumpkin puree {not pumpkin pie filling}
  • 2 tbsp vanilla
  • 1 tbsp pumpkin pie spice

STREUSEL

  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1/2 cup salted butter, diced
  • 1/2 cup flour
  • 1/3 cup pecans
  • 1 tsp pumpkin pie spice
  • 1 tsp nutmeg

Instructions

  1. Spray a 9x13 casserole dish with non-stick cooking spray. Place the diced bread in the pan, set aside
  2. In a large bowl whisk together the milk, sugars, cream, eggs, pumpkin puree, vanilla and pumpkin pie spice.
  3. Pour the liquid over the bread and cover with plastic wrap. Refridgerate for at least 3 hours to overnight. When ready to cook, make the streusel.

STREUSEL

  1. In a medium bowl, combine the sugars, butter and flour and lightly mix. Add in pecans, pie spice and nutmeg and mix.
  2. Sprinkle the streusel over the french toast mixture and cook at 350 degrees for 50-65 minutes or until thoroughly cooked through. If the top of the streusel gets too brown near the end of the cooking, but still needs more cooking - tent foil over the top to prevent burning.
  3. Serve warm and enjoy!

    This recipe had me a pecans with pumpkin. My two favourite combinations….well except chocolate ๐Ÿ˜‰ I love Egg Creations too. It is just not all of my shopping places carry them ๐Ÿ™ or they just carry the Original excluding any of the flavor ones ๐Ÿ™ So I do stock up when I see them. So easy to make a quick healthy meal with.
