Ice cream is oftentimes our go-to for special occasions like the last day of school to a celebration cake. Or, we just make our own. Our favourite is this Oreo Ice Cream Sandwich Cake, which is insanely simple.

Likewise, it’s a cool treat perfect for no excuse at all, you just can’t beat the rich creamy taste.

This is especially true when the temperatures spike, it’s a favourite for all ages.

I’ve chatted with many people who haven’t made their own ice cream before, and if that’s you – you must give it a try!

There are many ice cream recipes available, yet this one only calls for 5 ingredients which is one of the simpler ones to make. And during a busy summer, we all appreciate simple and uncomplicated.

I’m a fan-girl of blueberries this time of year {as I’ve stated many times recently}, so this recipe features this particular delicious berry.

Usually I buy blueberries by the case so I’m always looking for recipes to use them up – and this is a great one.

Yet you could also swap it out with another berry too of course. I’d suggest raspberries or even cherries. YUM!

Blueberry No-Churn Ice Cream

This Blueberry No-Churn Ice Cream is very simple to make, just 5 ingredients! Rich, creamy and the perfect summertime treat! This is an easy way to make ice cream

Ingredients

  • 2 cups heavy whipping cream
  • 1 cup + ½ cup {separated} blueberries
  • ½ cup icing sugar
  • 1 cup water
  • 1 tbsp of water and 1 tbsp of cornstarch {mixed together to make a slurry}
  • 1 can sweetened condensed milk, 12 oz

Instructions

  1. In a sauce pan, combine 1 cup water, sugar and 1 cup blueberries
  2. Bring to a boil, turn down the heat and simmer for ten minutes.
  3. Make a slurry with the 1 tbsp cornstarch and 1 tbsp water, then add to the blueberry mixture. Stir until thickened. Set aside to cool.
  4. Whip the whipping cream into stiff peaks.
  5. Fold in the Sweetened Condensed Milk
  6. Fold in the cooled blueberry mixture until well incorporated, adding the other ½ cup of fresh blueberries.
  7. Pour into a freezer safe container and freeze for a minimum of 6 hours or overnight.
  8. When serving, scoop ice cream into a bowl and enjoy!

  3. Yummy! I think I’m going to have to try this! We do have an ice cream maker but I love that you can pour this in the pan and put it in the freezer.
