Last month I went on a press trip with fellow blogger and friend, Julie. At the airport and starving for some lunch, we both were drawn to the egg salad sandwiches at one of the kiosks. It was a change from the usual Breakfast Egg Sandwich.

It must have been years since I’ve had one, which is {in my opinion} the best 3-sided sandwich ever. In the end, we were both still craving a really good egg salad sandwich, since the one we had was sub-par to say the least.

I was recently introduced to the very handy EGGS2go product from Burnbrae Farms. They are already cooked and peeled eggs found in the deli section of the grocer. I’ll say it again, folks – super handy! Also, I was surprised to see the price-point was very reasonable too, which is a double win in my books.

I knew what I’d be making with EGGS2go – a really good egg salad sandwich! Yet, since I’d been craving for so long, and also wanted to try a new recipe – I made Avocado Egg Salad Sandwiches!

It seems the whole world has gone gaga for avocado. While I haven’t jumped on the train fully as yet {just a short stay, always for guacamole}, I figured adding avocado into egg salad would be a perfect combination – and it is!

My kids, whom are not huge fans of foodie change, gobbled these up for lunch one day. Myself? It filled that long awaited craving indeed!

Avocado Egg Salad can of course be for sandwiches, or added to a wrap, or spread onto crackers. It’s very versatile.

I’m happy that I discovered EGGS2go in the deli section, all the hard work has been done already {cooking, peeling and hoping they peel right}. They are also perfect for an on the run breakfast, snack, pre or post workout, or for devilled eggs. Each also has 12 grams of protein per serving, so incredibly good for you!

Avocado Egg Salad Sandwiches

Yield: 4
Prep Time: 10 minutes
Total Time: 10 minutes

Avocado Egg Salad Sandwiches - egg mixture can also be used in a wrap, or spread onto crackers. It's very versatile and delicious! adding avocado into egg salad is a perfect combination!

Ingredients

  • 8 hard boiled eggs
  • 1 small avocado - pitted, peeled and mashed
  • 3 tbsp plain Greek yogurt
  • 2 tbsp mayonaise
  • 4 tbsp green onion, chopped
  • 4 tbsp celery
  • 1/4 tsp dijon mustard
  • salt and fresh ground pepper, to taste
  • Slices of bread for the sandwich

Instructions

  1. Place hard boiled eggs in a medium bowl and mash with a fork until you have medium chunks of egg.
  2. Add mashed avocado, yogurt, mayo, mustard, green onion, celery, salt and pepper - and mix until combined.
  3. Spread between two slices of toast.
  4. Enjoy!

Notes

you could also eat with crackers or in a wrap!
