With the warmer weather upon us, we obviously spend a lot of time on-the-go and outdoors. This results in opting for smaller and lighter meals; and a lot more time spent entertaining {or attending potlucks}.

Needless to say, I make the most appetizer recipes during the summer months – for the ease, taste, and convenience. So whether it’s just u,s or we’re hosting friends – appetizers are oftentimes the way to go.

I stumbled upon this Crusty Herbed Crostini appetizer recipe, and I just had to try it. It really couldn’t be simpler to make, and takes very few ingredients.

Since this recipe comes from the Windsor website, you know it has their signature salt and pepper as ingredients. While there are so many varieties of Windsor Salt, this recipe calls for Windsor Extra Coarse Sea Salt or Kosher Salt – I chose the latter this time around.

As well, the recipe calls for Windsor Black Peppercorns, which come in a grinder. I’m going to go out on a limb and say that all households have pepper on hand – as do we. Yet I purchased the Windsor Black Peppercorns grinder for this recipe, and now it’s going to be my go-to pepper – & the grinder is of excellent quality!

I actually don’t buy goat cheese very often, it’s not in any of the recipes that I make on a regular basis. Turns out I really like goat cheese! I thought I’d hear some complaints from the kids when I offered these Crusty Herbed Crostini’s as an after school snack. Colour me impressed when they gobbled them up and then asked for more as their dinner, and not just an appetizer!

The appeal in this recipe lies with the crusty baguette, comforting cheese and the blend of herbs and red pepper – it’s a great combination! This summer I need to try more versions of baguette recipes.

As I’ve mentioned before, the Windsor brand has that easily recognizable and iconic blue ‘castle’ logo, yet it recently had a minor modern update. The company offers the same great product that’s been around since 1893, with just a little change. As you can see, to the right is the older product, and beside is the newly rebranded packaging.

This Crusty Herbed Crostini Appetizer recipe is a crusty baguette, comforting goat cheese & a blend of herbs and red pepper - perfection!

Ingredients

  • 1/2 baguette thick), thinly sliced, approx. 1/2-inch (2 cm
  • 2 tbsp olive oil
  • 1 cup soft goat cheese, log
  • 1 tbsp fresh rosemary, minced
  • 1 tbsp fresh thyme leaves, minced
  • 1 tbsp italian parsley, minced
  • 1/3 cup roasted red pepper, diced
  • olive oil, optional - for drizzling
  • Windsor® Black Peppercorns, Grinder

Instructions

  1. Heat broiler in oven.
  2. Brush both sides of each baguette slice lightly with olive oil and place on baking sheet.
  3. Place under broiler, about 1 minute on each side, or until lightly golden. Remove from oven; set aside.
  4. Combine goat cheese with herbs in a medium bowl.
  5. Spread each baguette slice with 1 Tbsp (15 mL) cheese mixture.
  6. Top with 1 tsp (5 mL) roasted red pepper. If desired, drizzle with additional olive oil.
  7. Finish with ground Black Peppercorns, to taste.
  8. Finish with ground Windsor® Extra Coarse Sea Salt or Kosher Salt.

Notes

TIP: To make ahead, prepare baguette slices and store in air-tight container. Prepare goat cheese mixture and keep in refrigerator. Just before serving, assemble crostinis and arrange on a platter or tray.
