I just love the spring and Easter feel, but the cookies are so moist and cake-like. This is because this recipe uses boxed cake mix.

I made Funfetti Cake Mix Cookies for the sole purpose of welcoming a nice spring-like day, and for my readers that need an Eater-themed dessert.

Yet truthfully, these easy funfetti cake mix cookies can totally be made at any point in time and for any occasion.

These are great for baby showers and birthday parties too.

Even if it’s simply celebrating the fact that it’s Friday or you want to impresses everyone at the cookie exchanges.

I seriously cannot get enough of these cookies made from funfetti cake mix, so make and enjoy time and again as I do.

Since these are the easiest cookies to make, there’s really no excuse not to.

I’m not sure if the best part of these funfetti cake cookies is the simplicity or the taste, but I’ll happily be thankful for both.

These easy funfetti cookies are also the perfect cookies for a birthday party or baby showers as well.

The pretty pastel look of these confetti cake cookies recipe are great for so many occasions, even just to celebrate the arrival of the spring season.

Ingredients Required

You’ll need just a few simple ingredients to make these easter funfetti cookies. The full detailed instructions are on the printable recipe card below.

  • box of funfetti cake mix by betty crocker
  • vegetable oil
  • eggs
  • sprinkles
  • M&Ms candy

How to Make Funfetti Cake Mix Cookies

Preheat the oven to 350 degrees Fahreheit.

In a large bowl, add box of cake mix (dry cake mix), oil and eggs. Stir with a wooden spoon until combined.

You can use an electric mixer (hand mixer) on low, and until just combined.

Add the sprinkles to the cake batter and gently mix. Even though the cake mix has confetti sprinkles, I like to add extra sprinkles sometimes.

Add M&M’s and gently mix again.

Shape dough into 1″ balls using a cookie scoop, and place the dough balls about 2″ apart on a parchment paper lined baking sheet.

If you have more M&M’s, stick a few on top of the cookies if you so wish – the more the merrier!

Bake for 6 to 7 minutes, but make sure you don’t overcook so they don’t dry out. I take them out just when I see an edge starting to brown.

For best results, I tend to undercook just in case. You’ll want that soft texture.

Place on a cooling rack (wire rack) until entirely cooled.

How to Store:

When you make this confetti cake cookies recipe, place them into an airtight container and keep them at room temperature for up to 5 days.

Variations on This Recipe:

Use rainbow sprinkles or coloured sprinkles for a certain occasion. Likewise with the M&M’s candy.

You can use pastel like I did. or choose colours based on occasion.

You can also use white chocolate chips instead of candy pieces.

Recipe Tips:

If you cannot find Confetti cake mix, you can still make this funfetti cookie recipe.

Simply use a box of white cake mix and be generous with the colorful sprinkles to make the best colorful cookies ever.

Don’t overbake. For the best soft texture, make sure to not overcook these cookies.

They should be baked until the cookies just start to crack and before all the edges turn golden brown.

  3. Might have fixed it. I made them bigger and baked them longer – 11 minutes.
    Either way, I love the idea. I will be taking the to work tomorrow as its my last day before the holiday. Might just play around with it in the future to make it my own. Thanks for the recipe!

  4. The batter seemed super dry before I was to add in the M&Ms so I did add a touch more coconut oil (this is what I always use when baking cookies and cakes) and then it seemed too oily. Very stiff batter, though. The cookies did not spread out much and took a lot longer than 7 minutes to cook. I eventually patted them flatter with a spatula and had to lift them up to see if the bottom was browning to tell when they were done. It’s possible that I may have baked them a little too long, but I didn’t see any browning along the edges as all. I was able to make 24 cookies out of the one box mix. They are cute and not bad, but I am just not a huge fan of cake mix cookies. I’m sure my co-workers will love them tomorrow, though!

  5. Hi my cake mix is similar but it calls for 3 eggs should I do 3 or the 2 you suggested thank you

    1. If yours says 3, I’d first try three. I don’t think the extra would make a difference, but it could if it’s needed for that particular mix. 🙂
