Another great meal idea that we love is this Hawaiian Baked Chicken. But if pasta is what you crave, try this Chicken and Spinach Pasta Casserole.

One food which all of us like, is shrimp. My kids are really picky when it comes to fish and seafood, so shrimp is often our go-to – so we have it at least once every two weeks.

They love my Appetizer Garlic Shrimp as well as my Hot Shrimp Dip. Yet lately they are all about these Grilled Shrimp Foil Packs.

We all have different tastes, I know that. But, I think we can all agree that it’s THE KIDS that really have the different tastes.

Sometimes it’s a battle to prepare meals that will result in not one complaint from anyone. It’s like finding a unicorn.

When I make this Garlic Shrimp Scampi recipe, I actually get cheers from the kids. And that is a huge feat in itself!

So I fully admit that after a few days of complaints and forks pushing around food with looks like I’m torturing them into a slow death – I make this recipe just to boost my own ego.

It’s the little things in life, am I right? …

Garlic Shrimp Scampi is very simple to make, and takes little time as well. So it fits well even for the days when the schedule is bursting with activities. Which seems to be and more often these days.

Yet this is also a heathy meal, and gives us those vitamins and nutrients that only seafood can give. Shrimp is such a winner in this house, especially when combined with much-loved pasta.

Just make sure to defrost and drain the shrimp ahead of time, and it can be made in minutes.

Garlic Shrimp Scampi

Garlic Shrimp Scampi

Yield: 4
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Garlic Shrimp Scampi recipe - simple to make, and takes little time as well - great for the days when the schedule is bursting with activities.

Ingredients

  • 8 oz pasta, I used angel hair
  • 1 lbs pre-cooked shrimp, deveined and peeled if needed
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 cup lemon juice
  • 2 tbsp basil or parsley, chopped
  • 1/4 cup parmesan cheese
  • 1/4 cup extra virgin olive oil
  • salt/pepper, to taste

Instructions

  1. Cook the pasta according to the box directions. Best to leave it al dente.
  2. In the meantime, melt the butter in medium/high heat. Add the shrimp and garlic, cook 1 minute. Season with salt and pepper. Add the lemon juice and finish cooking the shrimp until it's pink, which will take about 2 minutes.
  3. Once the pasta is cooked and drained, add it to a serving bowl. Stir in the olive oil, toss gently to coat {More olive oil may be needed}.
  4. Add the parmesan cheese.
  5. Pour the shrimp over the pasta and toss once more.
  6. Garnish with the basil or parsley and serve immediately.

    I love how easy this is to make, with not too many ingredients yet it looks absolutely divine like it was ordered in a restaurant. My kids won’t eat shrimp but hubby and I would love this!

    OMG!!! This is sooo goood I made this because I had leftover whole wheat pasta and I had no other sol sol is looking for recipe with items that I had and this one did not call for white wine so I gave it a try. I’m so happy I did. Thanks for this Excellent recipe.
