Fall is one season when I absolutely crave soups, even more-so than the winter months. Something that isn’t too filling like a lot of winter-recipes can be, but a warm-up in the belly that keeps the chill away.

When the wind blows crisp leaves and there’s a sudden chill in the air – warming up with a bowl of soup and an oversized sweater is way better than cranking the thermostat.

How to Make Cheese Broccoli Soup

This easy soup recipe takes simple ingredients. The measurements and full instructions are below in the printable recipe card.

To Make: In a small saucepan on the stove over medium-high heat, melt the butter.

Add onions and garlic and saute for 3-4 minutes. Then add the all purpose flour and stir until flour is well incorporated; cooking at least 1 minute.

Slowly whisk evaporated milk into flour mixture. Continue to whisk until smooth. You can use an immersion blender if you ‘d like.

Pour the mixture into slow cooker, then add chicken broth. Whisk to combine.

Add fresh broccoli florets, black pepper, and salt. Cover and cook on low for a cook time of 4-5 hours.

Remove cover after the cooking time and add the shredded cheese. Stir until melted.

Ladle the crockpot broccoli cheese soup into bowls and top with additional cheddar cheese and black pepper if desired.

Recipe Variations:

This creamy soup recipe calls for a three cheese blend of shredded colby jack cheese, sharp cheddar cheese, and parmesan cheese.

While I love this combination, you can use other varieties as you’d like. The secret ingredient is a variety of blends, and lots of cheese.

I like to use low sodium chicken broth (chicken stock) for this recipe, because I like to adjust the amount of salt as I’d like and not start out with the possibility of it being too salty.

As you will see there is no heavy cream or cream cheese in this recipe. The creaminess comes from the evaporated milk, thus it’s a healthier soup version.

Storage:

If you have soup leftovers, store in an airtight container or cover well with plastic wrap. Refrigerate for up to 4 days.

Ingredients

  • 1 yellow onion, diced
  • ¼ cup butter
  • 2 garlic cloves, minced
  • ¼ cup flour
  • 12 ounce can evaporated milk
  • 32 ounces low sodium chicken broth
  • ¼ tsp black pepper
  • ⅛ tsp salt
  • 1 pound fresh broccoli crowns, roughly chopped {frozen works too}
  • 8 ounces colby jack cheese, shredded
  • 6 ounces extra sharp cheddar cheese, shredded
  • 4 ounces parmesan cheese, freshly grated

Instructions

  1. In a small saucepan, melt butter. Add onions and garlic and saute for 3-4 minutes. Add flour and stir until flour is well incorporated; cooking at least 1 minute. Slowly whisk evaporated milk into flour mixture; whisk until smooth.
  2. Pour milk/flour mixture into slow cooker, then add chicken broth; whisk to combine. Add broccoli black pepper, and salt. Cover and cook on low for 4-5 hours.
  3. Remove cover, add cheese and stir until melted. Ladle soup into bowls and top with additional cheddar cheese and black pepper if desired.

  18. I added a package of bacon first. Sauted that, then the onion and garlic. No butter needed. Made this in my pressure cooker. It has a saute mode. Then I switched the pressure cooker to slow cooker. I used 6oz parmesan, 8 oz sharp cheddar, and 12 oz of colby jack cheeses. I used 1.5 pounds of broccoli including the stems that were sliced about 1/4 inch thick and diced. Yum!
