How to Make Oven Roasted Potatoes
This is one easy baked potato recipe. Once you’ve cleaned and cut the red potatoes, simply add the olive oil and seasonings to a large zip-top bag.
Then you pat the potatoes dry and place in the bag with the olive oil and seasonings.
Shake well to coat the potatoes, and bake for 25-30 minutes, until forkable and golden brown.
This time of year I love comfort meals, and especially ones which are often oven-cooked.
As much as I love the ease of cooking with the slow cooker or skillet, I love when the house is heated with the warmth of the oven. The smells filling the air for hours.

It’s especially nice when I have the meat in the slow cooker, such as a whole chicken, and can cook the potatoes in the oven, and vegetables on the stove. Some say it’s too many steps but it’s all in the timing.

Oven Roasted Redskin Potatoes
Oven Roasted Red Potatoes is a classic recipe and a favourite in your rotation, and a regular on your dinner table. For the everyday to the holiday.
Ingredients
- 1 pound redskin potatoes, scrubbed and diced
- 2 tbs Olive Oil
- 2 tsp Garlic Powder
- 2 tsp Dried Parsley
- 1/2 tsp Black Pepper
- Sea salt to taste
Instructions
- Preheat the oven to 375 degrees.
- After scrubbing and dicing the potatoes {leave the skin on}, place them in a bowl and allow them to sit in cold water for 30 minutes prior to roasting.
- Add the olive oil and seasonings to a large zip-top bag.
- Pat the potatoes dry and place in the bag with the olive oil and seasonings. Shake well to coat the potatoes.
- Bake 25-30 minutes, until forkable and golden brown.
- *Makes approximately 4-5 servings.

Thank you for the reminder – time to get back to roasted potatoes! I also prefer the red once. But I always peel them. I know, all the nutrients are there, under the skin, but so is all the bad stuff, especially if they are not organic. I also want to make sure they are not green. I guess, mostly it’s a cultural thing though, Ive never seen anyone eating potatoes with skin until we moved to Canada 🙂
