Now that summer is coming to an end, it’s time to shift gears to more comforting foods in our rotation. There are many holidays coming up and along with cooler days, it’s time to think about the hearty wholesome meals that make the upcoming season a little warmer.

Just last week I made a bone-in ham, when a rainy day made me run for an oven baked meal. For a vegetable side I made Honey Glazed Carrots, a favourite in our house, and a nice switch from our usual Roasted Parmesan Green Beans.

The beauty about Honey Glazed Carrots is that it goes so well with so many main meats from turkey to even whole chicken. Speaking of, do you know how to cook a whole chicken in the slow cooker?

This recipe for Honey Glazed Carrots has enough sweetness and herbs to satisfy, yet doesn’t overpower the rich carrot taste. The mild sweet flavour is thanks to the addition of honey.

Not just a favourite spread on toast {my oldest daughter cannot have toast without it!}, we use honey quite regularly in our home, and for various reasons.

5 Tips for using Honey:

  • Honey is a great substitute for sugar in most baking recipes.

You can find a sugar-honey converter online. Since honey burns easier than sugar, reduce the cooking temperature by 25 degrees.

I personally love to brush still-warm muffins with honey, to give it a quick sheen and a great taste. Next week I’ll be making batches of muffins to freeze and send for school lunches, and substituting honey for sugar in the recipe is more nutritious, plus my kids go crazy for them!

For those prepping for canning season, remember that you can substitute half the sugar called for in a canning recipe, with honey!

  • Always store honey at room temperature

Maybe this is more of a tip, yet it’s an important one. If it’s not room-temperature, it becomes too thick to easily work with. I like to keep ours on a pantry shelf at easy reach, though storing in a kitchen cupboard is great as well, just make sure it isn’t near a heat source like the oven or stove.

  • Use honey to salvage foods that are too spicy

Examples include chilli and stews. I like to start with the addition of a 1/2 tsp of honey, and once completely stirred in, the mixture is much less spicy.

  • Sooth sore throats with hot water, lemon and honey!

This was my Mothers trick when I was young and something I reach for to this day.

  • Sweeten my tea or coffee with a teaspoon of honey instead of sugar

This is great, for less calories and a great taste.

Honey Glazed Carrots

Yield: 6
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

An easy, comforting and delicious Honey Glazed Carrots recipe, a perfect side to any dish whether it's a holiday or not. 

Ingredients

  • 1-2 lb carrots, peeled and cut into desired size
  • 2 tbsp salted butter
  • 3 tbsp honey
  • 2 tsp dill, fresh or dried
  • 2 tsp fresh thyme

Instructions

  1. Boil carrots in a pot until el dente and drain the water
  2. Reducing stove heat to medium
  3. Add all the ingredients to the almost cooked carrots and gently toss to combine.
  4. Cook, stirring occasionally, for 3-4 minutes.
  5. Serve immediately.

    I love carrots with my comfort food dinners. Growing up we always did the butter and brown sugar on the carrots. This sounds so delicious and I love the link you provided Billybee.ca that has the conversions to using honey in other recipes instead of sugar. Something I have been wanting to do.     I think this would be great for my son who has special needs & issues with foods like vegetables. I’ve been looking for ways to make veggies more appealing to his tastes & I am definitely trying these. The honey may just be the answer I’ve been looking for!

    I use honey on a ton of things. I love dipping my chicken in it. Peanut butter and honey is my favorite sandwich. I will have to try this recipe. It looks delicious.

    The honey glazed carrots look delicious. I like to use honey to make a soothing drink containing milk, honey, cinnamon. I only make it once in a while though. I’ve also heard that honey can be used to make a great hair mask for dry hair.
