The change in temperatures {brrr}, and the decreased daylight hours make me reach for soups more than than the warmer months. This Creamy Potato Soup recipe is so simple to make and takes few ingredients, just like our beloved Creamy Chicken Stew.

There’s nothing quite like settling in on a chilly fall day with a warm bowl of soup, there’s few other meals that satisfy as much as a bowl of soup this time of year. This recipe will transport you to Mom’s recipe from years ago – just adding to the comfort.

This recipe is quite easy too, I’d consider it no-fail. There are plenty of potato soup recipes out there, but this one is just so easy and delicious that it’s become one of my absolute favourites.

Lunch or dinner, you just can’t beat a hot bowl of Creamy Potato Soup this time of year. Now, someone get me an oversized sweater.

Creamy Potato Soup

Cook Time: 40 minutes
Total Time: 1 hour

Creamy Potato Soup is guaranteed to warm you up from the inside, out. It has a rich and creamy taste thanks to the addition of cream cheese.

Ingredients

  • 3 tbsp Olive Oil
  • 3 cups Red Potatoes, cubed and peeled
  • 3 cups Chicken Stock
  • 1 clove Garlic, minced
  • 1/4 cup Cream Cheese {you can use a little more if you want}
  • Salt and pepper if desired
  • Optional: serve with keilbasa sausage, green onions and bread

Instructions

  1. In a large pot over medium heat, saute the potatoes in the olive oil until the potatoes start to brown a little. Throw in the garlic and stir for another minute.
  2. Add the chicken stock and lower heat. Allow it to simmer for 30 or 40 minutes until potatoes are tender.
  3. With a potato masher, smash the potatoes inside the pot. This helps release the starch and make it thicker. You want the soup to remain chunky so don't smash too much.
  4. Add the cream cheese and whisk until it melts.
  5. Add salt and pepper to preference
  6. Serve with diced Keilbasa sausage, green onions and a slice of bread!
