While diving into leftovers of my twins birthday cake this summer, a friend of mine assumed it was entirely from scratch. Ummm, nope.

If there’s one thing to know about me, it’s that I usually bake using cake mixes. In fact this Hello Kitty Cake, the Monster High Cake and the 6-tier Frozen Cake {did I not share photos of this masterpiece? tsk, tsk} are all from cake mixes.

I don’t hide that fact, yet are so surprised that they are boxed cake mix, as ‘they taste homemade’, whatever that means. I think the secret to making boxed cake mix is to never, ever overcook.

In fact, I always undercook just a little and by the time it cools, it’s perfect. I even freeze mine before cutting and icing, and they still always taste light, fluffy and mouthwatering good.

Yet, I really haven’t featured many cake recipes on my blog because I had always assumed that everyone was searching for recipes that were made from scratch. Yet, would I? Probably not. I love the ease of a cake-mixed cake, and you can do so much aside from what’s written on the directions.

So, here starts a new mission for this space, simple yet impressive recipes made with cake mixes, and I can’t wait!

I think chocolate and salted caramel go together so well, it’s the feature combination of this dessert. Yet, a nice vanilla would be perfect as well.

Chocolate Cake Cups made from muffin tins with Ice Cream

Chocolate Cake Cups with Salted Caramel Ice Cream

Cook Time: 15 minutes
refrigerator time: 30 minutes
Total Time: 55 minutes

Salted Caramel Chocolate Cake Cups is made with boxed cake mix and few ingredients - ice cream is one! Easy and simple, this recipe is life-changing!

Ingredients

  • 1 Chocolate Cake Mix
  • 1 Egg
  • 3 Egg yolks
  • 1 tbsp Butter
  • Cocoa Powder, for dusting

Instructions

  1. Preheat oven to 350
  2. Empty cake mix into mixer bowl and add egg yolks, whole egg and butter.
  3. Mix thoroughly. Dough will be soft.
  4. Cool in the refrigerator for 30 minutes
  5. Dust countertop with cocoa powder
  6. Roll out cake dough to approximately 1/8th inch thick
  7. With a cookie cutter as large as the cups on a muffin tin, cut out 6 rounds
  8. Place the rounds inside a HEAVILY GREASED muffin tin, forming along the bottom and sides of the cups.
  9. Using a fork, prick many holes all over the bottom and the sides of the dough. You may also flatted with the fork prongs to make and even rim.
  10. Bake for approximately 10 minutes. When removing from the oven, the dough may have puffed up a bit. Simply take the back of a spoon and press the bottoms and sides back against the muffin tins to flatten.
  11. Let cool in the tins, and then remove.
  12. After completely cooled, spoon a medium sized scoop of salted caramel ice-cream {or ice-cream of your choice} into the cup.
  13. Drizzle the top with ice cream toppings of your choice and don't forget a dollop of whipped cream. Enjoy!
