Easy Chicken Stir Fry – Recipe for Kids

This easy Chicken Stir Fry looks good, doesn’t it?

I’ll let you in on a little secret about this easy dish: I didn’t make it.

Before I dive into the details on this yummy kid-friendly recipe, I have a little story to tell along with a great program for kids.

You see, my girls have always loved to help in the kitchen, in any way possible. From fetching items, to helping mix and pour, they’ve always been eager to assist. Yet it was only in the last year that my oldest daughter, Isabelle, expressed great interest in having full rein when it comes to cooking and baking. She was given a kids recipe book for Christmas last year, and has since made every recipe from the book, all by herself.

Oftentimes when I’m getting ready to make a meal, Isabelle literally puts herself in front of me, and says ‘I got this‘. I tell ya, parenting is a whole different experience when I get to sit back with a cup of coffee and watch my child cook a meal start to finish, with very few prompts from myself. I have to admit – I really love it. Not only does it give me a break {hey, it’s the truth!}, but in doing so, she is learning such a valuable life skill.

I happily support her desire and determination to cook solo, by introducing her to new easy recipes whenever I can. As well, I’m always on the lookout for fun tutorials and programs that encourage kids to get in the kitchen and cook! in return she eats them up like a good home-cooked meal. Win/Win!

It’s with this that I introduce you to Uncle Ben’s #BensBeginners, a program developed encourage healthier meals and better habits for kids. The goal is to teach more kids about good food and great ways to cook, knowing that the end result is a better life!

To get Canadian families in the kitchen cooking together and to encourage kids to to learn some healthy culinary skills – Uncle Bens has launched a national contest for kids and families to show everyone how quickly they can whip up a wholesome rice dish.

Every week until October 11th, a new video is published online with Logan Junior Chef, issuing a weekly challenge and a cooking tip.

Kids and their parents can upload photos of their crafty cooking to getkidscooking.ca for a chance to win one of three $10,000 RESPs!

This week, the featured video is Logan Junior Chef talking about how to cook with raw chicken. This video provides valuable tips when it comes to raw chicken safety and best practices. While we have a separate poultry cutting board, I have to admit that I don’t have a separate pair of poultry tongs. So, it was a good reminder to start doing this again, since there little learners in my household that need healthy habits right form the start!

In the Ben’s Beginners Weekly Challenge 4 video, Logan Junior Chef also announces this weeks challenge – making a recipe with Uncle Bens rice, chicken, and snowpeas.

And that leads me to Isabelle’s Easy Chicken Stir Fry and our fun in the kitchen one summer afternoon. This particular recipe for Chicken Stir Fry is actually one that I’ve been making for years, for when I need a meal in a pinch.

While there are many recipes for stir fry sauce out there, this particular one calls for only 4 common ingredients. Actually, this entire recipe calls for very few ingredients and takes little time to make – and those are combinations that are great for kids learning to cook.

Like many times before, Isabelle wanted full control in making Chicken Stir Fry. I was there on video duty. Here’s my daughter in the kitchen, showing how easy it is for kids to make Chicken Stir Fry!

Recipes for Kids - Easy Chicken Stir Fry

Yield: 4
Cook Time: 20 minutes
Total Time: 20 minutes

Here's a simple and delicious Chicken Stir Fry loaded with healthy vegetables that even kids can make.

Ingredients

  • 3 Boneless Skinless Chicken Breasts, cubed {or 4 if they are on the small side}
  • 1 sweet Red Pepper, diced
  • 2 cups Snowpeas
  • 1 cup Pineapple, diced
  • 1 pkg Uncle Ben's Bistro Express Jasmine Rice

STIR FRY SAUCE

  • 1/2 cup Ketchup
  • 1/4 up Soy Sauce
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Cornstarch

Instructions

  1. Pour 2-3 tbsp oil into a pan on the stove and heat on medium.
  2. Add diced raw chicken and stir as needed while cooking.
  3. While chicken is cooking, make the sauce by combining all 4 of the ingredients into a small bowl and mixing with a whisk. Set aside.
  4. When chicken is done cooking; add the pineapple, red pepper and snowpeas. Cook until veggies start to soften a little.
  5. Pour the sauce on the chicken/vegetable mixture and cook for an additional 4-5 minutes.
  6. Cook rice as per package instructions in the microwave.
  7. Serve together on a plate and enjoy!

    I’m a bit obsessed with sweet Thai chili sauce (add it to everything). So when I’m feeling like a stirfry, I use rice, chicken, snow peas and whatever other fresh or frozen veggies I fancy. A dollop of Sweet Thai Chilli, or some Korma sauce, and I’m good to go.

    I always make pans of stuff green peppers filled with rice,meat & veggies. I then I freeze them in serving size for later! Another one I make, our pans of is cabbage rolls with the rice and mixture!

    We stirfry chicken strips and sliced mushrooms, add snow peas, sliced red peppers, bean sprouts, add a sauce made from soya sauce, chicken broth, cornstarch and garlic and serve it over rice.

    I like to cook a recipe with Uncle Ben’s rice, vegetarian chicken (fake chicken) and snowpeas – After cooking the rice, add these other cooked ingredients, add some soy sauce, mix it up for a few minutes and then add it to flat bread, such as fajita (heated bread) add some shredded lettuce, shredded cheese and topped with tomatoes and avocados. Serve and enjoy, it’s delicious and the kids will love it too!

    One pan. recipe..in a large skillet that has a fitted lid…saute chicken tenderloin pieces in 1 tbsp of oil or margarine or butter just to seal in juices (don’t cook through), remove chicken from pan and stir in 2 cups of water and 2 chicken bouillon pouches….bring to a boil….add 2 cups of uncooked long grain rice to the skillet and stir…arrange uncooked snow peas in a single layer over rice…return chicken and evenly distribute on top of the snow peas….reduce heat to simmer…cover skillet tightly with lid…set the timer for 20 minutes (nothing to do but wait). Enjoy!

      It was probably about a year ago Melanie – so at age 9. I have an induction stove though, so that made me feel super confident. Not sure I would have otherwise, burns scare me!

    i’m torn between a chicken fried rice or delicious chicken and rice lunch wraps. The chicken, rice and snow peas would be perfect in both simple kid-friendly dishes.

    Oven Fried Rice. I put in vegetables. soy sauce, oil, salt and pepper and whole grain rice.

    Love making stir-fry wraps with chicken & Uncle Bens rice & snowpeas. Add some cheese, tomatoes & peppers & you have an awesome lunch. The grandaughter enjoys these.

    My oldest and youngest daughters love to cook with me and my oldest has started cooking meals on her own (with just a bit of guidance and some supervision). She would make Fiesta Rice with rice, snow peas and chicken (and red peppers and carrots and havarti cheese).
