Herbed Lemon Pork
I don’t have many recipes in my rotation that require just a skillet. Usually I have to bring out the BBQ, slow cooker or oven. For instance, I just love my Slow Cooker Cherry Coke BBQ Pulled Pork, and this Slow Cooker Apple Pork recipe.
Yet, skillet cooking is nice and easy, and usually is quick from start to finish. Plus, sometimes BBQing isn’t in the cards, or I’ve gone past the ‘I can slow cook’ time, or simply it’s too hot to turn on the oven.
This is where skillet meals are so nice, and the easy cleanup is even better.
Herbed Lemon Pork is a quick recipe that is made in the skillet, and the taste is outstanding. Lemon and pork are such a great combination, and really adds that light zing to the meal. Plus, it’s so pretty right? It may look more complicated than it is, but that can just be our little secret.
Herbed Lemon Pork can be paired with so much, yet I have a mad-love for asparagus. I do have another recipe on this blog for Lemon Pepper Asparagus, which is almost lemon-overboard to serve with it, yet you can omit the lemon from the recipe and it’s just perfect with this pork recipe.
Hmmm, can you tell I love lemon? Alternatively, you could steam some broccoli and rice as a side, and there’s always the option of a salad. Really, the pairing combinations with this one are limitless.
The point is, this Herbed Lemon Pork is a recipe that doesn’t have heavy sauces nor the calories that come with it {yet not skimping on taste}, which is most welcome.

Herbed Lemon Pork
Herbed Lemon Pork is a quick and easy recipe with few ingredients that is made in the skillet, and the taste is outstanding.
Ingredients
- 1 tbsp olive oil + ½ tbsp
- 1 pound pork tenderloin, cut into 8 medallions
- 3 garlic cloves, minced
- 1 cup low sodium chicken broth
- 1 lemon, zested and juiced {both set aside}
- 1 handful fresh parsley, roughly chopped
- salt
- ground black pepper
Instructions
- In a large skillet over medium heat, add the 1 tbsp olive oil. Season pork medallions with salt and pepper generously on each side. Place into skillet, and cook over medium high heat for about 2-3 minutes on each side {pork should reach 145 degrees F}.
- Remove from skillet and let rest on a large plate.
- Place the skillet back on the burner, add ½ tbsp olive oil and heat over medium heat. Add garlic and saute for 1 minute. Add chicken broth and bring to a simmer. Simmer for 5 minutes, occasionally stirring. Remove from heat.
- Add lemon zest and juice, and parsley; stir until combined.
- Serve pork medallions and spoon sauce over the top.
- Enjoy!
