When making a recipe to really wow, I oftentimes think of different spins on the classic favourites. In other words, little touches that bring a meal to a whole new level, yet not so totally out there that I risk it being a total flop. Case and point – French Toast.

Three cheers for french toast! It’s one of the most delicious and indulgent breakfast ideas out there. Yet, to make it even more mouthwatering and impressive – Strawberry Stuffed French Toast.

Perfect for those special occasions like Mother’s Day – you really needn’t an excuse to make this recipe. It’s a celebration on its own, no decadence spared.

This Strawberry Stuffed French Toast recipe is loaded with sinful ingredients that are well worth every calorie, but who’s counting right?

What you get is a golden brown crust with a strawberry and cream cheese filling. Why stop there? Powdered sugar finishes it off.

Strawberry Stuffed French Toast

Yield: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Strawberry Stuffed French Toast recipe - this is not ordinary french toast! It's decadent, sinful and so totally worth it!

Ingredients

  • 1 loaf french, italian, or challah bread
  • ½ pkg strawberries, hulled and roughly chopped
  • 8 ounces cream cheese, softened
  • 2 tbsp strawberry preserves {jelly works fine as well}
  • 3 eggs
  • ½ cup milk
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • butter
  • powdered/icing sugar, as desired

Instructions

  1. In a medium bowl, combine cream cheese and preserves. Mix well to ensure cream cheese doesn’t have any chunks left which can be done in a stand mixer or with a fork.
  2. Add the chopped strawberries to the mixture, mix and set aside.
  3. In a shallow baking dish, add eggs, milk, cinnamon, and vanilla. Whisk well to combine; set aside.
  4. Using a bread knife, cut bread into 2 inch slices {about 6 slices not counting the ends}. Taking each slice, cut a deep slit across the top of the middle of each slice, approximately 3-4 inches long. This will be the pocket the filling goes into. Careful not to cut through the bread. Repeat for all slices; set aside.
  5. Taking one slice at a time, scoop about 2 tbsp of filling into the pocket and press them closed. Set aside each slice and repeat for remaining slices.
  6. In a non stick skillet, add a couple dollops of butter and melt over medium/high heat.
  7. Dip one bread into the egg mixture at a time, turning over to coat both sides. Set into skillet. Repeat for next bread and cook 2-3 in the skillet at a time.
  8. Cook each for 2-3 minutes, or until crisped and browned; flip bread over and cook for 1-2 minutes on the other side. Remove and set aside. Repeat until all french toast is cooked.
  9. Serve french toast hot and sprinkle powdered/icing sugar over the top and serve with additional strawberries on the side.
