One Dish Salmon Dinner

It’s hard to bring the family together for nightly meals, I get it.

Before I became a Stay at Home Mom when the twins were born, my career involved shift-work. This meant there was weeks out of the month that Isabelle ate dinner at her sitters and not with our family.

Flash forward to now, it’s the activities and sports that throw a curveball in our day, many of them are right over dinnertime.

Yet, it is so very important to make having dinner together a priority, and as often as possible. For us, this means a family dinner at 4pm before activities on Wednesdays. It is early, yet it’s something that I’ve decided based on the fact that I want us all to sit down together for a meal. 

This is my time as a parent, to connect with my kids, learn more about them and ask them about their day. 

Yet, with school pickup at 3 and dinner at 4 … well, lets’ think about this. Does this leave time to make a healthy, proper meal that we can all enjoy?

On September 18th, 2014, Canadians are invited to participate in the tenth annual M&M Meat Shops’ National Family Dinner Night.

I’m working with M&M Meat Shops to encourage families to take a look at their mealtime traditions, and make it a priority to find the time to eat dinner together. It’s a wonderful family-first initiative that I strongly believe in. 

Which is why I’m happy to feature my recipe for One Dish Salmon Dinner!

I purchased 4 pieces of the Jail Island Salmon, which is from the Atlantic and raised in their natural environment by a family-owned company. It came highly recommended by the M&M Meat Shops employee, so I had to give it a try. Plus, I’m trying to incorporate more fish and seafood into our meals – so this worked perfectly.

Paired with the salmon is one of my all-time favourite sides found at M&M Meat Shops, Bean & Carrot Medley. My recipe was complete with some fresh cherry tomatoes that I had at home, which I needed to use up. 

One Dish Salmon Dinner is a recipe that takes very little time to prepare, it’s baked in one pan {I actually used 2 pans since I made so much} and it takes less than 30 minutes to cook.

Meaning, there’s no excuse to not get that family together for a meal, despite a tight schedule!

Here’s the easy, simple and delicious recipe!

One Dish Salmon Dinner

Yield: 5 people
Prep Time: 12 minutes
Cook Time: 15 minutes
Total Time: 27 minutes

One Dish Salmon Dinner recipe - there's no excuse to not get that family together for a meal with this quick, easy and delicious meal.

Ingredients

  • 4 Salmon Filets
  • 1/2 bag Bean & Carrot Medley
  • 2-3 cups Cherry Tomatoes, halved
  • Butter
  • Fresh Thyme
  • Lemon Slices
  • Salt and Pepper to taste

Instructions

  1. Spray a baking pan {or two if you wish}, with your choice of non-stick spray.
  2. Place Jail Island Salmon Filets, Bean & Carrot Medley and Cherry Tomatoes in the pan. I group the 3 items with the salmon in the middle.
  3. Pepper the ingredients as desired, I'm generous with the pepper. Salt the 2 vegetables lightly.
  4. Dollop butter onto the salmon and top with lemon slices and fresh thyme.
  5. Bake at 400 for 15 minutes, toss the veggies lightly to mix and bake for another 10-15.
  6. Enjoy!

new fall items m&m meat shops

M&M Meat Shops has some wonderful new Fall items, definitely dinner worthy.

I’m a huge fan of their skinless boneless chicken breasts and now you can get them in slices! Chicken Breast Slices would be idea for a quick dinner to enjoy together – I’m thinking wraps, quesadillas and fajitas! 

I also need to try their Stuffed Cheese and Bacon Beef Burgers, no explanation why is required! Same goes with the Stuffed Red Jalapeño Peppers – a new idea for appetizer & entertaining nights! 

What foods found at M&M Meat Shops will get YOUR family to the table?

    Mmm! This made my tummy grumble. 🙂 Looks delicious. And I love that it’s baked in one dish! How convenient. We like to incorporate fish in our diet too so that our kids don’t turn their noses up at food just because they look/smell different than what they’re used to.

    I get it too. Family dinners are hard to come by on weekdays, but it can be accomolished by being more practical.

    Living in BC, Salmon is definitely a staple in my cooking – especially during the late summer/early fall. This one dish dinner looks yummy, so I will try it the next time I make salmon.

    I usually try to partake of the M&M Meat Shops’ National Family Dinner Night which is sometimes difficult to do as my daughter works from 4pm to 10pm. However If I’m able to participate this year I’d love to try this recipe. We do both love salmon.
