It took me years to make my first loaf of Banana Bread. Truth is, a friend used to make many at a time and always gave me one or two from her supply. I was always so happy to get one from her so one day she asked why I didn’t just make them myself.
At the time, I didn’t ‘do bread’, and this confession made her laugh uncontrollably. She showed me how very simple it was, and it was then that I laughed at myself as well. It really is so easy!
Since that day many years ago {when she handed me her recipe and stopped being my bread dealer} I regularly make Banana Bread for my family myself.
Like she does, I make many loaves at a time, since they freeze so well. Then, I take one out of the freezer once a week, and serve as breakfast.
Banana Bread is a nice break from the usual cereal that my kids eat before school. Plus, it makes a great snack too, very great to have on hand.
** What I have pictured here is Easy Chocolate Chip Banana Bread, yet you can just as easily make this Banana Bread recipe without the chocolate chips.
Or, perhaps you could use white chocolate. Feeling festive? Try green chocolate chips {coloured or mint flavoured} for St. Patricks Day.
Since I make many loaves at one time, I usually do half with the chocolate chips and half without.
In my recipe you’ll see the chocolate being optional, meaning you don’t have to change the recipe at all except for the addition of the chocolate. Easy, right?

Easy Chocolate Chip Banana Bread
Easy Chocolate Chip Banana Bread, chocolate being optional, don't have to change the recipe at all except for the addition of the chocolate. Easy, right?
Ingredients
- 1/2 cup butter
- 1 cup sugar
- 3 ripe bananas, mashed
- 1 tsp Magic brand baking powder
- 2 eggs
- 1 tsp baking soda
- 1/2 cup cold water
- 2 1/2 cups flour
- *optional - 1 cup Baker's milk chocolate chips
Instructions
- Cream the butter and sugar together in a large bowl
- Add the mashed bananas and the eggs, and mix together
- Add everything else and mix thoroughly
- Pour into a greased loaf pan and bake at 350F for 1 hour or until an inserted fork comes out clean

Baking and soul food are a must in the fall. Brisk cold air – nothing better than a pot of homemade stew and bread rolls. If girth is your enemy – abstain – and a cup of coffee and a slice of banana bread will do. Never thought of using green chocolate chips – but will tuck that away for St Patrick’s Day. One thing I have found most banana breads can be quite dense/dry. A little tip that I learnt – use 6 bananas will not alter recipe but will make the banana bread more moist and once it comes from the oven – brush the top with milk – lends to a moist topping with soft edges.
