Mexican Fiesta Night: Chicken Quesadillas, Laughter & Moustaches

Recently I was a co-host for a really fun Twitter party with Chicken Farmers of Canada. The topic? #MexicanFiesta, and all the mouth-watering Mexican dishes you can make with Chicken. 

Besides a plethora of chicken jokes, highlights of the party included the many favourite dishes and recipes from Canadians all across the country.

I also gave everyone a teaser about a Mexican Fiesta that we had at home. 140 characters isn’t much to go into a lot of detail, and since we had such a FUN Fiesta at home, I thought I’d share with you in a post. So here I am!

To make our fiesta theme complete, Chicken Farmers of Canada sent us a huge Mexican party pack. So, the girls decorated while I did some prep work in the kitchen. Here my girls are, setting the fiesta stage.

Yes, that would be one kid in superman pajamas, the other in kitten pajamas and the last in her Strawberry Shortcake costume. That’s normal life here folks!

With Mexican music playing in the background, the girls danced while they decorated and I danced while I cooked. The meal of the evening? Chicken Quesadillas! 

I diced the chicken and started sautรฉing it while I cut up a colourful array of peppers. Once the chicken was almost cooked, I added the peppers to the pan to cook, and I shredded cheese.

This recipe states to fold the stuffed Quesadillas over and bake in the oven. The Quesadillas baked to perfection, I really like this method versus the pan-fry that I usually opt for. I think habits were broken on this day, I think I’ll use this method to cook my quesadillas from now on.

With music still on and Quesadillas baking, the girls had so much fun with the Mexican props. Necklaces, wee little Sombreros and Moustaches. Yes, moustaches!

Poor little katie couldn’t find a comb, but the hair brush worked {?!} … pardon me while I tuck these away for some future wedding slideshows.

After some moustache shenanigans, it was time to eat!

The Chicken Quesadillas were amazing! I like mine a bit spicier, so I added my friends homemade salsa on top of mine. The girls, with miler tastes, just had sour cream.

That’s the beauty of this recipe, though. You can alter the ingredients to suit preferences. I think next time I’ll add some green onion.

One of my twins screamed, ‘best party ever!’. Yet I think my favourite quote of the evening came from Isabelle. After decorating and dancing she said,”wow, my moustache is so sweaty!“. 

Yep, that sums it up: Chicken Quesadillas, Laughter & Moustaches. What a great Mexican Fiesta!

    Your girls are so cute and I love how they got right into the #MexicanFiesta spirit. It looks like a fun party.

    Chicken quesadillas are one of my faves and I need to make this recipe too. I got so many ideas for new meals to try from the Twitter party!

    Looks like you had a great party! My personal favourite recipe for quesadillas features a chicken and vegetable filling that you make in the slow cooker. It takes longer but it’s so, so worth it. The same recipe makes a pretty decent fajita filling if you fry it in a pan instead ๐Ÿ™‚

    I made your recipe this weekend and froze them for my youngest to take back with her to univ. hopefully they turn out after being frozen. great quick meals for them

    You went all out! I would never think of using El Paso to make quesadillas even though we make fajitas weekly and use their seasonings. I am going to have to give these and the oven method a try!

    I love making paella and we usually have taco nights, but changing it out with chicken quesadillas would be fantastic!
