Over the weekend, I bought a large fresh Zucchini from the Farmers Market. Impulse struck when I realized that I have never cooked with Zucchini. Ever.
Since I like to try new recipes and cooking with new ingredients, I thought ‘why not?’ and paid the elderly local man with the fresh veggie stand.
Immediately I thought of making the ever popular Zucchini Bread {my friend makes the best ever}, yet I wanted to try something new. A dish that was completely new to me.
Yet, I had to keep the kids in mind, something that they will actually try {and hopefully like}.
So, I came across a recipe for Baked Zucchini Fries, and altered it for what I had on hand.
This recipe for Baked Zucchini Fries is something which I’d consider a side, or a replica of a fancy appetizer you’d get at a restaurant.
It’s really good, and healthier than reaching for standard fries. Pair it was a Marinara sauce for dip – Mmmm. I just love this dip with the crispy spiced zucchini.
My tip is to cut the Zucchini into thin strips, or the insides will be mushy. This is a good thing, if you’d prefer it that way.
Yet I wanted it to resemble fries and not just spiced Zucchini bits, so the thinner, the better for us.

Baked Zucchini Fries
Baked Zucchini Fries is a healthier side dish to regular fries. Simple and tasty, pair with marinara sauce for dip.
Ingredients
- 1 large zucchini, sliced into skinny sticks
- 2 large egg whites, beaten
- 1/2 cup bread crumbs
- 3.5 tsp grated Parmesan cheese
- 1/3 tsp dried basil
- Pinch of dried oregano
- 1/4 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 425° and spray a baking sheet with cooking spray
- In large bowl or deep plate beat egg whites with a fork.
- Put the breadcrumbs, basil, oregano, garlic powder and cheese on a plate and mix well.
- One by one, dip the zucchini sticks in the egg whites and roll into the bread crumb mixture, to coat well and place on the baking sheet.
- Bake for ~23 minutes, turning over half way through. When done, the sticks will be golden brown and a little crispy.
- Serve warm with marinara sauce for dip.
