Once a week, to give the girls a break from cereal and yogurt for breakfast, and I make them muffins.
These Best Ever Banana Muffins are the best banana muffins you’ll ever try – crispy on the outside and fluffy on the inside.
Yet, our days are busy, so I need a quick and easy recipe that won’t take up too much time.
One of their favourites is this Easy Banana Muffins recipe that I make for them.
It’s a classic muffin that is moist and so flavourful. And, it sure does beat those same old blahs.
I’d definitely call this a classic and vintage recipe. Passed down for countless years, and will still be a favourite much later in time.
Funny how something simple like changing up the morning routine and serving muffins {fresh or made the night before}, really makes them incredibly happy kids.
It’s the simple things like a fresh homemade muffin that can kick-start the day right.
I cannot stress enough – these muffins are consistently moist and full of flavour.
While it’s a great breakfast, these are also wonderful any time of day, for morning or for school lunches and snacks!
They are great to have on hand and freeze so well too.

Easy Banana Muffins
For a healthy and delicious muffin recipe, try these easy Banana Muffins. Classic, irresistible and full of moist flavour! For morning and school lunches!
Ingredients
- 3-4 bananas, mashed, mashed
- 1 beaten egg
- 1/3 cup melted margarine or butter
- 1 3/4 cup white sugar
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cups flour
- 1/2 tsp Vanilla
Instructions
- Mix together sugar, butter, vanilla and then the egg
- In another bowl, mix the dry ingredients together
- Adding the wet ingredients into the dry, then add the mashed bananas and stir to combine.
- Pour batter into cupcake liners and bake for 10-12 minutes at 350 degrees. Enjoy!
