Pumpkin Pie Spiced Apple Compote is best served warm over ice cream, oatmeal, and/or yogurt. It's an easy mixture that you can reach for so often.

Ingredients

  • 3 Apples, peeled and diced
  • Juice of 1 Orange
  • 1 tsp Vanilla Extract
  • 2 tbsp Pumpkin Pie Filling
  • 1 tbsp Cinnamon
  • 2 Tbsp Maple Syrup {or sugar}

Instructions

  1. Combine all the ingredients in a medium size pan, cook on medium heat, stirring often.
  2. I prefer the apples in compote to still have a little bite to them, so I only cook for 10-12 minutes. If you overcook them, they will turn out mushy.
  3. Serve warm over ice cream, oatmeal, yogurt. Don't forget to have some whipped cream on the side. Everything is better with whipped cream!

  2. I love apples. I eat one nearly every day. This sounds great, but I am sugar free, and my daughter is allergic to oranges, so I will just have to enjoy the photos.
