In the summer I crave fresh fruit. Lots and lots of fresh fruit. Yet, it’s also a season of barbecues, patio gatherings, and different fruity drinks and deserts to serve guests – and yourself. 

In the colder months I make a mean Kahula cake that is absolutely perfect for an after-dinner treat. It’s a huge hit with the adults, so I’ll share the recipe and photos the next time I make it.

Now that it’s summer, I have been wanting to find a favourite seasonal dessert that is just as good as my wintertime favourite. Yet with a more of a sunny twist.

Well, here it is, folks!

Boozy Peaches and Cream Parfait is the ideal indulgence after a great summer meal, it really hits the spot in both sweetness and coolness on a hot day.

Yet, it’s also got that kick of bourbon or whiskey – so yes, this one is most definitely for the adults. Yet, that’s ok because we always have popsicles and freezies on hand for the kids, right? Sometimes we need a little something something in our back pockets for when the time calls.

Boozy Peaches and Cream Parfait

Boozy Peaches and Cream Parfait is the ideal indulgence after a meal, and with that kick of bourbon or whiskey - this is a great alcoholic dessert for adults.

Ingredients

  • 2 ripe peaches, pitted and sliced into about 8 pieces
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 4 tsp sugar
  • 5 tsp bourbon or whiskey
  • 1 cup granola

Instructions

  1. In a shallow dish, add peaches and sprinkle with brown sugar and vanilla*; place in fridge and let sit for 15 minutes.
  2. Using a stand mixer or electric mixer, add heavy cream, 4 tsp sugar, and bourbon/whiskey to the bowl; whip/beat on high speed. After a few minutes the cream should thicken up and form peaks; set aside
  3. Using your serving bowls or glasses, add a bit of granola to the bottom of each one, then top with about ¼ cup whipped cream, sprinkle more granola, then arrange 4 peaches on the side of each bowl/glass. Top with additional granola and a dot of whipped cream. Serve immediately.

Notes

Each parfait will use about ¼ cup of granola.
For a more boozy recipe, add 1 tsp of bourbon to the brown sugar and vanilla when you soak your peaches.

  7. The post could’ve been titled, “Boozy (anything)” and I would’ve jumped to read the recipe! In the summer months, it’s so nice to eat a light dessert & this one looks perfect. I really like cream based desserts. And I’d make a couple for the kids without the booze.

  8. I’m not really one for alcohol so I’d probably make this with a reduced amount or perhaps just leave it out altogether for me and only use the alcohol for my guests 🙂
