Mini Strawberry Cheesecake Bites

Cheesecake is an all-round favourite and certainly a must-have with my family. It just might be our favourite dessert ever, and we’ve certainly earned our cheesecake-expert status!

I love small-sized individual portions, like our Mini Apple Pies. Then you can have more than one without the guilt!

These Mini Strawberry Cheesecake Bites are adorable, easy to make {hooray for no-bake!} and are perfect additions to an evening of entertaining. The question is, can you eat just one?

Mini Strawberry Cheesecake Bites

Prep Time: 15 minutes
Cook Time: 10 minutes
Additional Time: 2 hours
Total Time: 2 hours 25 minutes

Mini Strawberry Cheesecakes are bite-sized delicious dessert for the summer months. Adorable and delicious, bliss in every bite!

Ingredients

  • 2 cup Strawberries, washed and hulled
  • 1/3 cup Sugar
  • 3 tbsp Sugar
  • 1 1/2 tbsp Lemon Juice
  • 1/2 cup Boiling Water
  • 1 1/2 tbsp Gelatin
  • 1 1/4 cup Whipping Cream
  • 8 ounce Philadelphia Cream Cheese
  • 1 1/3 cup Graham Cracker Crumbs
  • 1/4 cup Packed Brown Sugar
  • 1/2 cup Butter, Melted
  • 8 Strawberries for garnish
  • 1 Cool Whip or Whipped Topping for garnish

Instructions

  1. Combine Strawberries, tbsp granulated sugar, and lemon juice in a blender and blend until it's a smooth texture. Set Aside.
  2. Mix Gelatin, 1/3 cup sugar in a bowl and add the boiling water. Stir until Gelatin dissolves {~4 minutes}
  3. Beat the whipping cream using an electric mixer until stiff peaks form. Add the cream cheese and beat on medium-high speed until the mixture is smooth
  4. Slowly add the Gelatin mixture to the cream mixture and gently fold to blend. Add the strawberry mixture and continue to fold until it's all smooth. Set aside.
  5. Line a mini cupcake pan with mini liners.
  6. Combine the graham crumbs and sugar in a bowl. Add the melted butter and mix until well combined.
  7. Press graham crust into the liners, about 1/4" thick.
  8. Add the strawberry mixture onto the crust, to the top of the liners.
  9. Refrigerate cheesecake bites for at least 3 hours before serving. Before serving, add a dollop of whipping cream {can or cool whip variety}, and garnish with a slice of fresh strawberry.
  10. Enjoy!
