The spring is well underway, but here in Alberta we’re having an unusually beautiful season and it really feels like summer out there {I didn’t jinx anything, I hope}. We’re already well used to the backyard, deck, BBQing and even camping! 

We’ve spent the last 2 weekends out at our creek property camping, it’s sure to be a summer of outdoor fun. Just pack some clothes and a cooler of perishable food and off we go!

Yet, to make sure I’m making the most of my relax-time out at the creek, I’m organizing my chaos {heh} to ensure smooth sailing while there.

For instance, I’m meal planning our camping time, to make sure we bring enough food but not too much. Also, by prepping as much as I can before we go, it means less time I have cooking while out there.

This is good practice for me, since meal planning in the past has never gone well. Perhaps after a summer of practice, I’ll be a meal planning superstar by Fall {fingers crossed}! 

This past weekend I decided on Chicken legs, Great Canadian Potato Salad and peas for dinner. So on Friday I made the salad so that I didn’t have to make it while there.

Great Canadian Potato Salad is delicious, was the perfect meal to take for the weekend and is a side that I will make again {for our BBQ dinners or good for taking along to a potluck}.

I love that I sat back with a drink by the fire while hubby took the reins on the BBQ – yes, making ahead was a huge hit in so many ways!

Great Canadian Potato Salad

Yield: 6
Prep Time: 15 minutes
Cook Time: 20 minutes
resting time: 2 hours
Total Time: 2 hours 35 minutes

Great Canadian Potato Salad is classic and delicious - the perfect side for BBQ dinners, potlucks or any weeknight!

Ingredients

  • 3/4 cup Miracle Whip Calorie-Wise Spread
  • 1 tsp mustard
  • 1/2 tsp celery seed
  • 2-3 tsp pepper
  • 1-1/2 lb red potatoes, 675 g, about 5, cooked, chopped
  • 1/4 onion, finely chopped
  • 1/4 cup green onion, chopped
  • 2 stalks celery, sliced
  • 1/2 cup chopped sweet pickles
  • 2 hard-cooked eggs, chopped

Instructions

  1. Mix first 4 ingredients in large bowl.
  2. Add remaining ingredients; mix lightly.
  3. Refrigerate several hours or until chilled.

  4. I love potato salad. You gotta have bacon though. I always add cooked bacon to my potato salad. Have you ever tried mashed potato salad? It’s really good too. I think I’ll be making some potato salad this weekend.
