Raspberry Dream Cupcakes for National Cupcake Day

We all know Cupcakes are a sweet and tasty treat, but what if you could use that sweet tooth for a good cause?

Right now you can ‘Bake a Difference’ through the second annual National Cupcake Day™, taking place February 24th, to benefit Societies for the Prevention of Cruelty to Animals and Humane Societies across Canada.

The initiative originally began by the RSPCA in Australia and began in parts of Canada last year. For 2014, new sponsors jumped in to help even more SPCAs all across Canada. It’s a delicious way to show your support of animal welfare across the country and simple to participate. All proceeds raised go to support our animal friends. 

Since National Cupcake Day {for a good cause} can’t be without cupcakes, I made a treat which I like to call Raspberry Cupcakes. These are heavenly in a little bundle, plus bright and cheery for Valentine’s Day or to help bring on the feeling of Spring.

Here is the recipe to make and share with your friends, one taste and they’ll gladly support the SPCA!

Raspberry Dream Cupcakes

Yield: 1
Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients

FOR THE CUPCAKES

  • ▪ 2 cups frozen raspberries
  • ▪ 2 bars of white chocolate, I used 2 bars of Ghirardelli (4 oz each
  • ▪ 2 Tablespoons lemon juice
  • ▪ 1/4 cup softened butter
  • ▪ 1 cup sugar
  • ▪ 2 large eggs
  • ▪ 1 1/2 cups all purpose flour
  • ▪ 1 teaspoon baking powder
  • ▪ 1/4 cup milk

FOR THE ICING

  • ▪ 8 oz package of softened Cream Cheese
  • ▪ 7 oz jar Marshmallow Cream
  • ▪ 1/3 cup of Fresh Raspberries, chopped

Instructions

  1. CUPCAKES
  2. Preheat the over to 350 degrees and line muffin pans with paper liners.
  3. In a pan over medium heat, cook the frozen raspberries until they are soft and start falling apart, stir often. Reduce the heat to low and add the chocolate in small pieces, stirring until melted. Add the lemon juice. Stir and set aside.
  4. With a stand mixer using the paddle attached, cream together the butter and sugar. Add the eggs, one at a time while continuing to mix.
  5. Add the raspberry and melted chocolate mixture and mix well. Reduce the mixer speed to low and add the flour and baking powder, and mix for 2 minutes. Add the milk and mix until incorporated.
  6. Divide the batter among the prepared baking cups, I fill 3/4 of the way up or just a bit more than that {since this batter doesn't rise as much as other batters would}
  7. Bake at 350 for 25-28 minutes until done, yet do not over-bake as cupcakes will dry out.
  8. ICING
  9. Blend cream cheese and marshmallow cream together until mixed, using a stand mixer or hand mixer. When smooth and creamy, carefully fold in raspberries.
  10. If your house or the icing is too warm and the icing starts to melt considerably, chill the icing for a couple of hours before icing the cupcakes. Don't frost warm cupcakes or the icing will melt considerably.
  11. Garnish with a fresh raspberry and enjoy!

Of course you can always opt to just donate to the cause without baking. My Online Bakery is taking donations to support our local SPCA, a place where we have taken animals home with us in the past. These days we still visit often to cuddle the animals, the girls love spending some time with the cats and dogs. 

 In 2013 animal lovers across Canada raised over $400,000 to support their favourite societies with this initiative, so let’s make 2014 an even bigger one!

  10. What a cool prize pack this is! I had a wonderful rescue dog in my life. We shared an incredible 11 years together. I miss her everyday and am so grateful that we shared that time together. Humane Societies and SPCA’s provide such a critical service for neglected and abused animals. What a cool way to raise funds for them!
