Slow Cooker Chicken and Rice with Parmesan Mushroom Sauce

We recently tried a new recipe for dinner, Slow Cooker Chicken and Rice with Parmesan Mushroom Sauce. The family consensus is that it should be made again sometime, so of course it’s going to make it to the Recipe Box at My Organized Chaos.

Chicken and Rice with Parmesan Mushroom Sauce

Yum

It’s a take on Chicken Parmesan, yet a mushroom sauce substitutes the more common tomato-based sauce. Instead, using the slow cooker, you get all that ‘Parmesan taste’ in the tender chicken and rice alone. It’s a very flavorful meal, definitely better to taste than to take photos of.

Best of all? It’s a crock-pot meal, meaning dinner is ready without the mad-scramble in the kitchen just before. All you need to is add some greens {we opted for Caesar salad}, yet it would be great with green beans, a tossed salad or a mix of steamed veggies.

You don’t have one? I couldn’t live without mine, there’s nothing like dinner ready and waiting when you walk in the door. You must get one!!

Hi Candace, I don’t, probably for good reason! lol
I don’t think it’s too bad, yet you could scrimp on the salt by using low-sodium soups. I also use 1% milk, so I’m sure that helps as well.

We have a slow cooker but never use it because we have no recipes (well a few) but none that people have tried that are new and looks like something we eat, this looks mouth watering, thanks! We have tried 8 of your recipes now and there all great!

Awesome to hear – I love that my Recipe Box is going to great use! I know I rely on it a lot myself, but great to hear that others do as well. I plan on posting a few more slow cooker recipes, stay tuned!
