Chicken And Spinach Cannelloni Rolls

When asked if I would try out the new Lasagna Sheets by Olivieri, I was game. After all, I love me some Italian food and hadn’t tried these sheets as yet. Since they don’t have to be boiled first and are bought fresh and ready to use, I was drawn to the possible discovery of  a new short-cut in the kitchen {I’ll take any and all}. So, why not try them, right?

What I didn’t realize is that by doing so, I have come up with the BEST recipe that I’ve ever created to date. Chicken And Spinach Cannelloni Rolls. Seriously.

Yet first, a little about the products I used {I’ll build the suspense a bit. You’re welcome}.

When making pasta dishes, I always went with the dried {boil on your own} stuff. When I picked up the Olivieri Lasagna Sheets at the grocer for the first time, I could see how they would be convenient. And fresh is nice, right? As well, it was priced at $3.49 {Walmart} for the package which is very reasonable. While the promotion lasts you can also get a $1 off coupon as well.

After trying them? I’m a new and huge fan. With pom-poms. Really, you can’t beat fresh and the taste is about 1500 times better than the dried stuff. And, it cooks evenly. So major points for taste, convenience and price!

As well, the sheets are made with whole grain, no preservatives, artificial colours or flavours. So, yep – good for you too. Wait? Whole grain… I would have never known! As you’ll soon see in my recipe, you don’t have to use them just for lasagna either.

So there ya have it – yes, I was given coupons to try them for the first time but I WILL NOT go back.

Onto the recipe {drumroll}.

I could have taken my tried, tested and true Lasagna recipe and made a delicious meal for my family using the Olivieri Lasagna Sheets. Yet, I while I’m trying new things, why not keep try a whole new recipe? The following is a blend of my cannelloni recipe and a couple ingredients which I thought would make this new one stand out {like the Olivieri Rosé Sauce}.

For the moment, pretend I’m shaking you by the shoulders while screaming…

I don’t post recipes on here that I don’t think people will enjoy. I would recommend all the tasties found in the Recipe Box at My Organized Chaos, because I like them a ton. Yet this one in particular? Not only have I told people to make it, but I have happily offered to make it for them just to ensure they they got a taste. Do you sense my excitement about these roll-ups? {insert jazz hands}

Hubby claimed my Chicken And Spinach Cannelloni Rolls are “better than I’ve ever gotten in an Italian restaurant” {blush}. The kids? I didn’t even notice them eating it so fast, until their plates were licked clean {really!}. We had enough for leftovers for the next night, and discovered they are even better warmed up. Then the day after that, I was tempted to make it again. #imayhaveaproblem

So that’s my Olivieri story, with a new recipe creation that I’m eagerly sharing with you.

I served this dish with Caesar salad and garlic toast and remember that you can make it in the morning and bake later. I’m pretty sure you could freeze as well, yet I’ll have to try that one time and let you know for sure.

Chicken And Spinach Cannelloni Rolls
 

Ingredients
  • 3 skinless, boneless Chicken Breasts {cooked}
  • 1 pkg Olivieri Lasagna Sheets
  • 250g Chopped Spinach Leaves
  • 2 tbsp Olive Oil
  • 500g fresh Ricotta Cheese
  • 1 Onion, finely chopped
  • 3 Garlic Cloves, minced
  • 1 jar Italian Pasta Sauce
  • 1 300ml Olivieri Rosé Sauce
  • 1 cup Mozza or Cheddar Cheese {optional}
  • salt and pepper to taste

Instructions
  1. Mince Chicken Breasts using a processor
  2. Heat oil in a large frying pan over medium heat. Add onion and garlic. Cook for 3 minutes, or until tender.
  3. Add chicken mince and cook for 5 minutes, stirring with a wooden spoon. Set aside to cool.
  4. Preheat over to 350°F
  5. In a bowl combine Ricotta, chopped spinach and a pinch salt and pepper. Add chicken mixture to Ricotta mixture and blend well.
  6. Cut Olivieri lasagna sheets crossways so that each sheet makes 2.
  7. Grease a deep baking dish and spread the Olivieri Rose Sauce on the bottom. Add 1 cup pasta sauce on top of the Rose Sauce and blend just a little.
  8. Take one pasta sheet and place approx.1/4 cup of filling along one edge of the pasta and roll.
  9. Place {seam down} in the dish and repeat with remaining sheets.
  10. Pour remaining Italian Pasta Sauce over the rolls and sprinkle cheese on top of sauce {I sprinkled a little of the mixture on top as well, since I had some left. That’s optional though}
  11. Bake uncovered for 30-35 minutes or until top bubbles. Let stand 5-10 minutes before serving.

      Where are you Heather? I noticed that Walmart had a full stock and Sobeys had a few varieties. My closest grocer doesn’t carry them, but hopefully soon. Good thing I live in a small city though, going to another is usually the norm.

        Ireland. LOL…I’m pretty well accustomed to having to adapt recipes I find online to use products I can find here. I’m sure I’ll figure something out! Who knows…maybe they are sold here?!

          Fresh lasagna sheets are sold at pretty much all large grocery stores in the UK, Heather. I get mine at either Morrisons or Sainsbury’s so if you’ve got one of those near, you’ll be able to find them no problem. They’re typically near the fresh made pizzas. Good luck and enjoy the meal! :)

    What a great product and a really tasty recipe. I’ve always hated the chore of waiting for the water to boil, and then the pasta, and then draining, yada yada – so this skips all those steps and saves quite a bit of time.
