Old El Paso Taco Night Prize Pack Giveaway

You know those favorite go-meals that you lean on, knowing that the whole family will love? I have a handful of kitchen secret-weapons for those times when I don’t want to risk someone not eating, for those busy days and just for a good ‘ol comfort meal.

What are your go-to meals?

One of our favorites is Taco night; easy to prepare and the meal contains all the food groups in itself. Most times we stick to just tacos for this reason {complete with beef, lettuce, cheese, tomatos, sour cream and salsa}. Occasionally we go for hard shell tacos, finally the twins are able to eat them without too much spillage. Yet my kids’ favorite is still soft tortilla taco nights.

The last time we had taco night I wanted to put a different spin on the meal. For the first time, I made a side to serve with the tacos – Spanish Rice! The kids weren’t that crazy about it, I think only because they aren’t used to their rice being RED. Seriously, kids can be so picky! Yet, it is a great flavor, such an easy recipe and I’m sure once they get past the fact that the rice is a different color {sigh}, they’ll enjoy it.

Easy Spanish Rice

Ingredients

  • • 3 cups cooked rice
  • • 1 tsp Taco seasoning
  • • 3/4 cup Salsa
  • • salt and pepper, to taste

Instructions

  • • Steam or boil rice according to package directions. You can use Minute Rice too, if you wish. Make sure rice is drained after cooking.
  • • Combine ingredients and cook for no more than 5 minutes.
  • • Serve and enjoy!

  2. We always make a flavored rice to put IN the tacos or fajitas! Yum! :)

    My favorite taco/burrito filling is quite similar to your spanish rice side dish. I make it and add a can of kidney beans and use it as part of the filler in the soft tacos, along with the rest of the toppings. It is a good way to stretch the beef filling as well because you can do half and half.

  5. I generally serve tacos with a salad, then I eat my taco (which is always dripping with goodness) over the salad and voila – Taco Salad. I know it’s kinda lazy but mmmmm. We also make our own homemade salsa each summer so my taco is always smoothered in salsa :)
