Points for ingenuity and for taste. Ya, it packs the presentation punch, but trust me, they aren’t admired for long. Yum!
Apple Pie Egg Rolls
Ingredients
- 1 tablespoon butter
- 3 cups apples, peeled, cored and diced
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- 6 egg roll wrappers
- vegetable oil for frying
- ** For garnish after cooked:
- 1 tablespoon sugar mixed with ¼ teaspoon cinnamon or icing sugar
Instructions
- In a medium size frying pan: melt butter then add apples, brown sugar, and cinnamon. Cook over medium-high heat, stirring often until apples are tender and mixture carmelizes. Pour into a bowl and refrigerate to completely cool {about 30 minutes}.
- Place approx. 2 tablespoons of apple filling into each egg roll wrapper {wet edges of wrapper with water} then roll up sealing edges. Repeat with remaining wraps.
- Heat oil in a frying pan to about 350 degrees. Add egg rolls, turning to cook all sides {slightly browned}. Depending on size of pan, you may need to cook them in 2 batches. Don’t overcrowd the pan or you won’t be able to easily turn them.
- Remove wraps to a paper-towel on a plate and sprinkle with cinnamon sugar or icing sugar.
- Eat them just as or it’s even better when served with vanilla ice cream and caramel sauce.
