Tater Tot Casserole

‘Casserole’ can be a bad word in my house, according to my girls. They are very picky with casseroles most likely stemming from their tendency to stick their nose up at vegetables. So, I made Tater Tot Casserole one night, just to show them that they can get excited about the term.

Tater Tot Casserole

Ingredients

  • • 1 lb. ground beef
  • • 1 small onion, finely chopped
  • • 1 can condensed cream of mushroom soup
  • • 1/4 cup milk
  • • 1 cup frozen mixed vegetables {peas, carrots, corn, green beans} or your preference
  • • 1 cup Shredded Cheddar Cheese
  • • 1lb. frozen potato tater tots

Instructions

  • • Heat oven to 375ºF
  • • Brown meat with onions in large skillet, stirring occasionally; drain. Spoon into 2-qt. casserole.
  • • Mix soup and milk; pour over meat mixture; top with layers of remaining ingredients.
  • • Bake 45 min. or until potatoes are golden brown and casserole is heated through.

Enjoy!

Hubby is not a fan of casseroles either, but this looks like one he would like!

It’s really good! I thought it might be a little greasy b/c of the tater tots – but no! One to try, for sure!

Ahh yes – so happy I didn’t have to shop for once before trying out a recipe! I don’t think that has ever happened before!
