Summertime Family Favorite : Strawberry Romaine Salad

When it comes to salads, my family will never give up our frequent and all-time favorite – Caesar salad. Yet when summer hits, we all crave another delicious salad made with fresh strawberries! This time of year is perfect for buying strawberries – they are ripe and usually comes at such a low cost. Here is our favorite strawberry summer salad {say that 5 times real fast!}

Strawberry Romaine Salad

1 head Romaine Lettuce
2 cups trimmed and sliced Strawberries
1 small Red Onion, sliced in rings

Dressing:
1/3 cup Vegetable Oil
2 tbsp Red Wine Vinegar
2 tsp Sugar
1/4 tsp Salt
Pepper to taste

It helps if you add all the dressing ingredients to a jar and then shake to mix. As well, I also add some Spinach Leaves to my salad {this and all other salads, actually}. It gives salads that extra nutritional punch and usually no one notices the spinach anyway. Funny though, my husband just realized that I add spinach to all my salads – after almost 10 years of marriage!

This Strawberry Romaine Salad is bright, colorful and has that sweet flavor that only fresh strawberries can provide. It’s also so fast to make, nice for those days when you are short of prep time. Life Made Delicious has other easy recipes that call for strawberries as well. Again, we love making the Three-Berry Trifle recipe that I spoke about last month. This recipe has made its way into my ‘favorites’ section of my recipe box. It’s favorable to try a recipe with in-season fruits and vegetables – you can add variety to your meals and stay within budget!

    I make similar to that but use spinach, and I throw in dried cranberries, and poppyseed dressing, but only Renee’s drssing tried others but didn’t like them. And instead so using croutons I used the fried breaded onions. So good
